Vrat Wali Kaddu Ki Katti Meethi Sabzi

It is lip-smacking vegan preparation prepared with pumpkin, cumin seeds, green chillies, red chilli powder .. for sourness dry mango powder is added and for sweetness Jaggery / Granulated Sugar is added. A SATTVIC preparation with NO ONION and NO GARLIC. Kindly Note: Some people avoid consuming Red chilli powder and Dry Mango Powder during Vrat (Fasting). Kindly skip adding, if desired.

Cooking Time: 25 minutes
Serves: 4
Ingredients and  Quantity:

Pumpkin preferably Yellow, washed, peeled, seeds discarded and cubed- 1 small
Cumin seeds-1 tsp
Whole dry red chilies or Chopped green chillies-2
Red chilli powder-1/2 tsp.
Dry mango powder (Amchur)-1 tsp.
Sendha Namak- to taste
Peanut Oil-2 tbsp.
Water-1 cup + 1 tsp. Sugar /Organic Jaggery.. mix well
For the Garnish:
Coriander leaves, finely chopped- 1 tbsp.
Heat oil in a non-stick pan.
Add the cumin seeds , let them splutter.
Add chopped green chillies, sauté for a few seconds.
Add the pumpkin, sauté for a minute and stir.
Add red chilli powder and dry mango powder.
Stir and cook for a few seconds.
Now add the water in which sugar / jaggery powder is mixed.
Cover and cook.
Ensure that you stir it occasionally.
Once it is cooked , mash a few pieces.
Serve hot garnished with chopped coriander leaves.
Goes best with Kuttu Paratha or Kuttu Poori
