Carrot, Orange and Almond Mawa Modak

Our beloved Lord Ganesha is arriving…

Welcome and Pamper him with his favourite sweet … Modak…

How about preparing his much-loved Modaks with the natural earthy flavour of fresh carrots, zesty flavour of Fresh Oranges, crunchiness of coarsely ground almonds and richness of Khoya / Mawa.

Preparation Time: 10 minutes

Cooking Time: 15 minutes

Makes: 14

Ingredients and Quantity:

Mawa (Khoya) 350 gm.

Green Cardamom Powder- ¼th tsp

Fresh orange juice and organic honey, reduced- 1 ½ tbsp.

Fresh Carrot, puree, cooked and strained- 1 ½ tbsp.

Almonds, lightly toasted and coarsely ground – ½ tbsp.

For the greasing / lining the mould and thali:

Unflavoured and unscented cooking oil- as required

Method:

Grate the Mawa (Khoya).

In a heavy-bottomed non-stick pan add the grated mawa.

On a low flame, keep stirring the mawa till it begins to melt.

Once the fat from the mawa starts oozing out add the cardamom powder.

Keep stirring till the mixture leaves the edges of the pan.

Transfer to a glass bowl.

Let it cool a little then add the reduced orange juice and honey and the cooked carrot puree.

Add the coarsely ground almonds.

Knead the mixture to soft dough.

Divide the dough into 14 equal portions.

Place a ball in the greased mould , press it to ensure that it gets the impression or shape of the modak mould.

Gently remove the modak and place on a greased thali.

Repeat this process till you prepare modaks from the entire dough.

Offer these scrumptious modaks to Lord Ganesh.

You may consume it at room temperature or these may be refrigerated and consumed later, as desired.

Chef Tips:

You may add cooked and strained beetroot puree instead of carrots, if desired.

You may add fresh fruits puree to the modak
