A lip-smacking and healthy slow cooked sweet prepared in almost all Gujarati Homes, prepared with roasted and cooked broken wheat, loads of clarified butter, sweetened with jaggery and flavoured with green cardamom powder. Served garnished with slivered nuts and raisins.

Ingredients and quantity:
Broken Wheat (Lapsi)- ½ cup
Clarified butter (Desi ghee)- 4 tbsp. + ½ tbsp.
Jaggery, grated- 1/4th cup / or more if desired
Green cardamom powder- 1/4th tsp
Raisins, lightly fried in desi ghee- 8 nos.
Cashew nuts, lightly fried in desi ghee- 8 nos.
Water, warm- 2 ½ cups.
For the Applying:
Silver leaf (Chandi Ka Warq)- 1 small sheet (Optional)
For the Garnishing:
Mixed Nuts, slivered- ½ tbsp.
Raisins, lightly fried in desi ghee- 8 nos.
Edible and dried rose petals- 02 tsp.
Method:
Heat ghee in a heavy-bottomed non-stick pan, add the broken wheat, stirring it occasionally sauté it on medium flame till it turns light golden brown.
Add water, mix it well and cook on a high flame till it comes to a boil.
Simmer and cook, stirring it for 20 minutes.
Add the grated jaggery and ensure that it melts completely, cook it for another 5 minutes.
Now add the cashew nuts and raisins.
Sprinkle the green cardamom powder, mix it. Drizzle 1/4th tbsp. of clarified butter and simmer for another 5 minutes.
Switch off the flame , you will see the clarified butter oozing out.
Serve it hot drizzled with ½ tbsp. of clarified butter, garnished with slivered nuts and rose petals.
Chef Tips:
- The best part of preparing this sweet is that it can be prepared well in advance, completely cooled down and stored in air tight container in the refrigerator. Just before it has to be served, add ¼ th tbsp. of clarified butter and 1 tbsp. of warm milk, mix well and microwave it and serve.
- You may prepare jaggery syrup , strain and pour it in the lapsi instead of grated jaggery.
- You may garnish with coconut shavings too.
- Variations that you can prepare is Saeb Lapsi.
