Lip-smacking crispy thinly sliced bitter-gourd ,cooked with golden brown onions and spices with a sprinkle of dried mango powder.

Ingredients & Quantity:
Bitter gourd (Karela) – 6
Onions, thinly sliced- 2 large
Green chillies, slit-2
Refined oil- 4 tbsp.
Asafoetida- 1/4 tsp.
Turmeric powder-1/4th tsp
Red chilli powder-2 tsp.
Coriander Powder-2 tsp.
Dried mango powder (amchur)-1 tsp.
Salt- 1/2 tsp to sprinkle on sliced karela.
Salt- to taste
Method:
Wash the Karela, remove the head and tail and discard.
Slice the karela thinly, sprinkle a little salt and mix very well.
Keep aside for 15 minutes.
Squeeze all the water from the bitter gourd and discard the water.
Heat the oil in a deep non-stick kadhai, add the karela slices and saute on a low flame till light golden brown and crisp i.e. 10 to 15 minutes.
Remove from the pan and set aside.
In the same pan add very little oil, once it heats add asafoetida, sliced onions and sauté on a medium flame for 2 to 3 minutes.
Add the slit green chillies. Sauté for a few seconds.
To this add the turmeric powder, red chilli powder, dried mango powder, little salt and 1 tbsp of water, mix well and cook on a medium flame for a few seconds.
Add the fried karela slices, cook for another 2 minutes, while stirring it occasionally.
Serve it very hot
