Punjabi Kathal Di Sabji (Punjabi Kathal Ki Sabzi)

Delicious vegetarian dish prepared with unripe jackfruit in a spicy and tangy Onion and Tomato Gravy with an infusion of mind-boggling Indian spice powders.

Preparation Time: 15 minutes

Cooking Time: 45 to 50 minutes

Serves: 4

Ingredients and Quantity:

Jackfruit unripe/ raw- 500 gm.

Refined oil- as required for deep frying

Cumin seeds- ½ tsp.

Onion puree- 01 cup

Ginger, grated- 01 tsp.

Garlic, grated- 02 tsp.

Tomato Puree- 02 cups

Red chilli powder preferably Kashmiri- 1 ½ tsp.

Coriander powder- 1  1/2 tsp.

Turmeric powder- 1/4th tsp.

Salt- to taste

Green chillies, slit- 02 nos.

For the sprinkling:

Punjabi Garam Masala- ½ tsp

For the Garnishing:

Coriander Leaves, chopped- ½ tbsp.

Method:

Apply oil on your palms.

Keep some oil aside, for cutting the jackfruit, as you will require it to be applied on your palms, while you are in the process of cutting the Jackfruit.

Peel the jackfruit and slice into rounds of desired thickness.

Slice rounds into halves, and remove any thick stem in the centre, before cutting slices into chunks.

Do not wash.

Scrape off the dirt, if any.

Heat oil in a heavy bottomed non-stick kadhai and deep fry the pieces over medium heat, till light brown. Drain and set aside.

Use the same oil for the tempering but definitely lesser in quantity.

Heat oil in a heavy bottomed non-stick deep pan.

Add cumin seeds, let them splutter.

Add the onions, ginger and garlic puree. Let it cook till the raw aroma of the onions disappear.

Add the tomato puree and cook till the oil oozes out from the edges of the masala.

Add red chilli powder, coriander powder, salt and turmeric.

Stir to mix well. Let it cook for 2 minutes

Add the slit green chillies and deep fried chunks of jackfruit, stir ensuring that you do not spoil the texture of jackfruit.

Add ½ cup of water. Bring it to a boil, simmer and cook till the jackfruit is cooked through and evenly.

Serve hot, sprinkled with garam masala powder and garnished with finely chopped coriander leaves.

Chef Tips:

  1. Applying oil on your palms, prevents it getting sticky and itchy.
  2. You may pressure cook the Jackfruit after adding ½ cup of water- 01 whistle.
