Winter Special-Powerhouse of nutrition , a sweet prepared with multigrain flours cooked in clarified butter, sweetened with organic sugar loaded with nuts.
Preparation Time: 15 minutes.
Cooking Time: 20 to 25 minutes
Multigrain flour prepared with the below mentioned – 250 gm.
Whole Wheat- 50 gm
Pearl Millet- 50 gm.
Oats- 50 gm.
Barley- 50 gm
Amaranth grain- 50 gm.
Fox nuts, lightly toasted and coarsely ground: 25 gm.
Fenugreek seeds, lightly toasted and coarsely ground: ½ tsp.
Carom seeds, lightly toasted and coarsely ground- 01 tsp
Poppy seeds, lightly toasted and powdered- 1/4th tbsp.
Dried ginger powder- ½ tsp.
Dry fruits, toasted and coarsely ground includes, almonds, pistachio, cashew nuts, melon seeds- 1/4th cup
Whole dry fruits, sautéed in clarified butter, include almonds, pistachio, cashew nuts, melon seeds, raisins- 1/4th cup
Sugar, organic- 150 gm.
Clarified Butter (Desi Ghee) – 150 gm.
For enhancing the appearance:
Edible rose petals / flowers- as required.
In a heavy bottomed non-stick pan add clarified butter, add the multigrain flour, cook on a low flame, till the raw aroma disappears and it gets a beautiful light reddish color, that is for 10 to 15 minutes. Ensure that you keep stirring it so that it is evenly cooked and colored.
Remove from the flame add the organic sugar and coarsely ground fenugreek seeds, fox nuts, carom seeds, poppy seed powder, dry ginger powder and dry fruits.
Mix well and ensure that it is completely cooled down.
Now add the whole dry fruits. Mix.
Transfer in to airtight jars, if not consumed immediately.
Goes best with hot milk in winters.
Just before service, garnish with edible dried flowers / rose petals to enhance its appearance.
