This lip-smacking chutney will steal . It is prepared with deseeded and chopped guava, tangy vinegar, red chilli powder, cumin powder, black pepper powder ,finely chopped fresh ginger , fresh ginger juice, sweetened with sugar & flavoured with powdered cloves and cinnamon cooked in very little oil and fresh guava juice/ water till well-cooked and jammy.

Ingredients and Quantity:
Guava not completely ripe-1 kg.
White Vinegar – 115 ml.
Red chilli powder -2 tsp.
Cumin powder-1/4th tsp.
Salt / Rock Salt -to taste
Sugar-115 gm.
Ginger juice, fresh-2 tbsp.
Refined Oil -4 tbsp
Ginger , finely chopped -2 inch
Black peppercorns, powdered-18
Cloves, powdered – 8
Cinnamon powder- 1 inch
Water – 500 ml.
Guava juice, fresh- 350 ml. (Optional)
Method:
In a glass bowl add deseeded and chopped guava, red chilli powder, cumin powder, salt / rock salt, sugar
& fresh ginger juice.
Mix well and set aside.
In a non-stick kadai heat oil add the chopped ginger, the chopped guava , powdered black peppercorns, powdered cloves & cinnamon powder.
Sauté for 2 minutes.
To this add the water, cover and cook on low flame for 25 minutes.
Remove the lid and add the fresh guava juice (optional) and continue cooking for another 5 minutes.
Ensure that the guava is well cooked and the consistency of the chutney is thick.
Let it cool down.
Transfer in an airtight sterilised and dry glass container and refrigerate and use when required.
