Strawberry Marmalade

This Lip-smacking marmalade is prepared with just 3 ingredients – fresh ripe strawberries, sugar and lemon juice.

Preparation Time:10 minutes

Cooking Time: 50 minutes

Shelf-life: 6 months (Refrigerated)

Makes : 500 gm.

Ingredients and Quantity:

Fresh Strawberries, ripe- 1 kg

Granulated sugar- 675 gm.

Lemon juice, fresh- 4 tbsp.

Method:

Rinse the strawberries in a colander under running water thoroughly. Repeat this process till the strawberries are free of any dirt. Drain all the water and let them dry.

Remove the green tops and leaves from the strawberries.

Keep the strawberries aside.

If the strawberries are too big, cut into halves.

Now in a saucepan place the strawberries. Add sugar the sugar.

Keep stirring on a low flame and ensure that the sugar does not caramelize.

You will see the sugar melting and strawberries leaving their natural juices.

Simmer for 10 minutes.

Now add the lemon juice. Stir.

Simmer until the marmalade mixture starts reducing.

Stir occasionally.

When you see that the mixture has started leaving the sides of the pan, it simply means that the marmalade is ready.

Switch off the flame and let it cool at room temperature.

Transfer in a dry, sterilised  & air-tight glass bottle / jar.

Refrigerate and use , as and when required

Chef Tips:

To check whether the marmalade is set and good to go…

Place a spoonful on a plate , if it stays on it without leaving its juices / water , means it is done
