A Classic Bohra drink prepared especially, during the Holy Month of Ramadan with jaggery, water, freshly squeezed lemon juice, soaked sweet basil seeds and garnished with fresh mint leaves.
Preparation Time: 10 minutes
Soaking Time of Jaggery: 6 hours
Refrigeration Time: at least an hour
Makes: 4 glasses
Ingredients and Quantity:
Jaggery grated or cut into cubes- 2 cups
Filtered Water for soaking Jaggery- 3 1/2 cups
Sweet Basil Seeds (Sabja Seeds)-2 tbsp.
Filtered water for soaking sweet basil seeds-1 cup
Lemon juice, freshly squeezed- 4 tbsp.
For the straining of Jaggery water: Food grade, unbleached muslin cloth– 1/4th metre
For the Garnish:
Fresh Mint Leaves-a few leaves
Method:
Add grated / cubed jaggery in a large glass bowl.
Cover it with water.
Cover it with a lid and set aside for at least 6 hours until the jaggery dissolves completely in the water.
Strain through the muslin cloth.
Soak the sabja seeds in 1/2 cup of water for 30 minutes.
After 30 minutes you will see that the seeds swell up.
Add the soaked sabja seeds & lemon juice in the jaggery water. Stir well.
Refrigerate it for at least 30 minutes.
Serve chilled garnished with fresh mint leaves
Chef Tips:
You may add mint leaves in the drink.
You may add ice cubes in the drink.
