Goan Style French Beans Foogath

French Beans Foogath is simple, easy, quick to prepare, mildly spiced and healthy. Foogath is almost an everyday preparation in every Goan homes, a side dish during meals along with fish, curry and steamed rice.

Preparation Time: 15 minutes

Cooking Time: 12 minutes

Serves : 4

Ingredients and Quantity:

French beans, stringed and finely chopped -450 grams

Vegetable / Coconut Oil- 1/4th tbsp.

Asafoetida- a pinch (Optional)

Mustard seeds- 01 teaspoon

Curry leaves- 01 sprig

Onion, finely chopped -01 large

Green chillies, chopped- 02 nos.

Salt- to taste

Coconut scraped -1/2 cup

Lemon juice- ½ tbsp.

Method:

Heat oil in a non-stick kadai, add mustard seeds and curry leaves.

When mustard seeds begin to splutter, add Asafoetida, add the chopped onion and green chillies. Cook for 02-03 minutes.

Cook the onions till translucent.

Add the chopped French beans and salt.

Cook, covered, on slow flame for 07 to 08 minutes or till beans al dente.

Add the scraped coconut and sprinkle lemon juice.

Mix well and serve hot.

Chef Tips:

  1. You may add a pinch of Turmeric, if desired, usually it is not added in this recipe.
  2. You may add broken dried red chillies in the tempering.
  3. You may sprinkle a little water in the French beans so that they can cook in steam.
