Black Pepper Cauliflower, Saffron and Fresh Cream Cottage Cheese and Mushroom Indian Spice Bowl   /

Kali Mirch wali Phool Gobi, Kesar aur Malai Paneer and Kumbh Garam Masala Bowl

Enjoy this lunch bowl consisting of Black pepper cauliflower, Saffron and Fresh Cream Cottage Cheese, Mushroom Garam masala, fresh cucumber and tomato salad along with juicy Red Muscato grapes.

Preparation Time: 15 minutes

Cooking Time- 15 minutes

Serves- 04 

Ingredients and Quantity:

Cauliflower, cut into florets and blanched- 02 cups

Mushroom, cleaned and stem removed- 02 cups

Cottage cheese , cut into roundels- 08 slices

Tomatoes, quartered- 04 small

Cucumber, sliced- 02 large

Spinach leaves, cleaned and washed- 12 nos.

Red Muscato grapes- 250 gm

Saffron- ½ gm

Fresh cream- 60 ml.

White pepper- 1/4th tsp.

Black peppercorn, lightly roasted and freshly ground- 01 tsp.

Turmeric- 1/4th tsp

Punjabi Garam Masala- ½ tsp.

Chaat Masla- 1/4th tsp.

Lemon Juice- 02 tsp. (Optional)

Salt- to taste

Olive Oil- 1 ¼ th tbsp.

Method:

Apply fresh cream, saffron, white pepper and salt to the paneer.

Keep aside.

In a non-stick pan add a little olive oil add cauliflower and stir-fry till light golden in colour and sprinkle salt and freshly ground pepper.

In the same pan add a little olive oil and add the mushrooms sauté till golden brown in colour add salt, garam masala powder, turmeric and chaat masala. Keep aside.

Place paneer in microwave safe plate and cook at 540 watts for 6 minutes.

In a clean bowl arrange a few spinach leaves and place the sliced cucumber and quartered tomatoes.

Place the cauliflower, cottage cheese and Mushrooms.

Place the juicy red Muscato grapes.

You may sprinkle a little lemon juice over the sliced cucumber and quartered tomatoes.

Enjoy this lunch bowl and don’t forget to have a little sweet tamarind as a mouth freshener and aids digestion.

Chef Tips:

  1. Al dente, you have to cook the vegetables just long enough so that it is neither hard nor soft but is firm and slightly chewy.
  2. You may add green zucchini and yellow zucchini as well, if desired.
  3. You may use broccoli instead of cauliflower, if desired.
  4. Blanching is a cooking process wherein a vegetable, is scalded in boiling water, removed after a brief, timed interval, and finally plunged into iced water or placed under cold running water (shocking or refreshing) to stop the cooking process.
