Nothing can beat this comforting creamy bowl of porridge prepared with roasted almonds, apple, cauliflower, cinnamon powder blended with coconut milk and cream laced with roasted almonds, lightly toasted pumpkin ,melon & black sesame seeds drizzled with chilli oil.

Serves: 4
Ingredients and Quantity:
Roasted almond paste- 1/4th tbsp.
Apple, peeled and cut into chunks- 02 nos.
Cauliflower, cut into florets- 375 gm.
Cinnamon powder- a pinch
Coconut milk- ½ tbsp.
Coconut cream- ½ tbsp.
For the Garnish:
Roasted almonds- 04 tsp.
Pumpkin seeds, lightly toasted- 02 tsp.
Melon seeds, lightly toasted- 02 tsp
Black sesame seeds, lightly toasted- 1 tsp.
Chilli oil- 02 tsp.
Method:
Steam the cauliflower florets for 7 minutes to soften it.
Place the Roasted Almond paste, Apple, Cauliflower, cinnamon, coconut cream and coconut milk in a blender.
Blend till it is smooth.
Pour in the bowls and serve garnished with Roosted almonds, Pumpkin, melon and black sesame seeds drizzled with chilli oil.
Chef Tips:
- You may add walnuts, dates and a pinch of salt.
- If you do not prefer eating the porridge spicy skip the chilli oil and drizzle it with organic honey or extra virgin olive oil.
- Do not peel the apples ahead of the actual preparation of the porridge as it will turn brown due to enzymatic browning.
