Shakarkandi aur Khajur Ka Paratha

This delectable Sweet potato and dates paratha will steal the thunder out of your meal!!!!

Preparation Time: 20 minutes

Makes: 8

Ingredients and Quantity:

Whole Wheat Flour, sieved- 2 ½ cups

Water- as required to knead the dough

Whole Wheat Flour for dusting- as required

Clarified butter- 1 ½ tbsp. / or more for baking

For Covering the Dough:

Muslin Cloth- 1/2 metre

For the stuffing / filling:

Sweet Potato (Shakarkand / Shakarkandi), boiled and mashed- 1 1/4th cup

Dates (Khajur), finely chopped- 1/4th tbsp.

Red chilli Powder- ½ tsp.

Chat Masala- ½ tsp.

Carom seeds, lightly toasted- 1/4th tsp.

Ginger, grated- 3/4th tsp.

Green chillies, finely chopped- 2 nos.

Coriander leaves, finely chopped- 1/4th bunch (Small)

Salt- To Taste

Method:

Prepare a medium soft dough with whole wheat flour and water.

Cover with a moist muslin cloth and set aside.

In a glass bowl add all the ingredients mentioned for the stuffing. Mix well, ensuring that you do not over mix as it will become mushy.

Divide the stuffing into 08 equal portions.

Divide the Dough into 08 equal portions form neat balls with the help of your palm.

Roll it a little, place one portion of stuffing, enclose it. Dust it with flour and roll carefully ensuring that the paratha does not break.

Place on a hot griddle cook on both the sides and apply clarified butter and bake evenly till light golden brown and crisp on both the sides.

Serve hot with curd, pickle of your choice and salad.

Chef Tips:

  1. If you are serving this paratha to the kids skip the red chilli powder and green chillies.
  2. You may add chopped raisins in the paratha, kids will definitely love the addition of this.
