Oven baked potatoes sprinkled….with dried mixed herbs and topped with…. fresh cilantro, chopped red chillies, tomatoes, garlic & saffron yogurt.
Preparation Time: 10 minutes
Baking Time: 55 minutes
Serves-4
Ingredients and Quantity:
Potatoes, unpeeled- 04
Extra Virgin Olive Oil- 1/4th cup
Salt- ½ tbsp.
For the Brushing:
Butter- 02 tsp.
For the Sprinkling:
Mixed Herbs, dried- 02 tsp. / more, as desired
For the Topping:
Cilantro, fresh and chopped- ½ tbsp..
Tomatoes, pulp removed and chopped- 1/4th tbsp..
Red chillies, chopped- 02 tsp.
Garlic and Saffron Yogurt- 02 tbsp.
Method:
Preheat the Oven to 425◦ F
Wash and dry the Potatoes. Do not peel.
Pierce the potatoes with a fork and rub olive oil and salt all over the potatoes.
Place the potatoes in the preheated oven for 50 minutes.
Brush with butter, sprinkle dried mixed herbs.
Top it with fresh chopped cilantro, chopped tomatoes and chopped red chillies.
Drizzle with a little extra virgin olive oil.
Place in the oven for another 5 minutes.
Place in the serving dish and pour garlic and saffron yogurt on top.
Chef Tips:
- The time for baking the potatoes varies as it depends on the size of the potatoes.
- I personally suggest that you use even sized potatoes so that all the potatoes take similar time to bake.
- You may serve the baked potato without baking topping, it’s just that I like the topping to be a little crisp.
