A variation to the traditional, rich and delectable sweet especially prepared for winters. Prepared with Raw Turmeric / Fresh Turmeric, fresh cottage cheese, skimmed milk powder and low fat cream with the addition of stevia and flavored with green cardamom powder.

Cooking Time- 10 to 15 minutes
Serves- 6 to 8
Ingredients and Quantity:
Cottage Cheese, fresh, home-made, crumbled- 400 gm
Milk Powder, Skimmed- 400 gm
Cream, low fat- 500 gm.
Raw Turmeric / Fresh Turmeric (Kachi Haldi) – 60 gm. / as desired
Stevia- 1/ 16 th tsp. / as desired
Saffron, Broiled- ¼ th gm.
Green Cardamom Powder- ¾ th tsp.
For the Garnish:
Pistachio nuts, chopped- 2 tsp.
Almonds, chopped- 01 tsp.
Method:
Wash, pat dry and peel the Kachi Haldi and grind to a fine paste. Cook the paste in a heavy bottomed pan till the raw aroma disappears and set aside.
In a heat-resistant / microwave proof glass bowl, mix cream and milk powder thoroughly.
Heat the mixture for 02 minutes in a microwave.
Add Stevia and heat it again for 05 minutes.
Remove from the microwave and set aside to cool.
Now add the haldi, add paneer, green cardamom and saffron.
Mix it thoroughly.
Set it and cut it into desired shapes.
Serve garnished with Pistachio nuts and almonds.
Chef Tip: Do not over cook the kachi haldi as it may impart bitter flavor to the Kalakand.
