Try this healthy salad at home that does not compromise on taste.
Grilled Chicken, Strawberry And Baby Spinach Salad With Roasted Poppy Seed Dressing
Preparation Time– 15 minutes
Cooking / grilling time for chicken breast- 08 to 10 minutes
Serves- 4
Ingredients and Quantity:
Romaine lettuce-04 cups
Strawberry, sliced-01 cup
Blueberries, fresh-01 cup
Mandarin oranges- 01 cup
Pineapple chunks-01 cup
Pecans, toasted and cut into Halves- ½ cups
Grilled chicken breast, sliced-01 no.
Poppy Seed Dressing:
Light mayonnaise- ½ cup
Skimmed milk- ¼ th cup
Dijon Mustard-01 tsp.
Orange juice- ¼ th cup
Sugar- ¼ th cup.
Apple cider vinegar- 1/8 th cup
Poppy seed- ¾ th tbsp.
Salt- if required , to taste
Method:
- In a glass bowl toss the Salad ingredients together.
- Whisk together dressing ingredients
- Drizzle the dressing to the salad ingredients and toss gently.
Chef Tips:
- You may lightly roast the poppy seeds to make it crispier.
- Wash and keep the lettuce in chilled water, in order to keep it fresh and crispy
- Add the dressing to the salad just before service, inorder to prevent it from becoming soggy.
- You may add baby spinach ¼ th bunch, if you are a spinach lover.
- You may marinate the chicken with extra virgin olive oil and dried herbs before grilling and then slice.
