I am an ardent fan of Alphonso mangoes, so that made me prepare this Panna Cotta even though Mangoes are not in season. I suggest that you prepare this delectable and creamy panna cotta when Alphonso Mangoes are in Season.
This elegant and delectable Italian chilled dessert is prepared with Alphonso mango puree, pomegranate pearls, cream and is lightly sweetened and flavored with vanilla extract and can be prepared well in advance.
Preparation Time: 10 minutes
Cooking Time: 15 minutes
Chilling Time in Refrigerator, if in served in bowls / glasses: 2 hours
Chilling Time in Refrigerator if served demolded: 5 hours or overnight.
Serves: 2
Ingredients and Quantity:
Alphonso Mango Puree- 1/2 cup
Pomegranate Pearls- 01 tbsp.
Cream, low-fat- 300 ml
Agar Agar- 08 gm.
Sugar- as required
Vanilla Extract- a few drops
Method:
Soak the agar agar powder in lukewarm water.
In a non-stick pan mix cream, milk and sugar, place on a slow flame, whisk to mix and let it come to a gentle boil.
Switch off the flame
Place the agar agar on a slow flame till you see it completely dissolved.
Now mix the agar agar with the prepared cream mixture, whisk it to mix completely.
Let it cool.
Add Vanilla extract and mango puree mix well.
Add pomegranate pearls mix lightly.
Pour into serving glasses / bowls.
Place the bowls in the refrigerator for 5 hours to set.
Serve chilled garnished with Pomegranate pearls.
Chef Tips:
You may use unflavored Gelatin instead of Agar Agar. It has to be soaked in normal room temperature water or cold water.
Make this Panna Cotta when Alphonso mangoes are in season.
