This sweet and sour chutney blend prepared with dates, tamarind, jaggery and other Indian spices, is an essential accompaniment to almost all chaat recipes.

Cooking Time: 15 -20 minutes
Serves: 1 cup
Ingredients and Quantity:
Dates (Khajur), deseeded- 1 cup
Tamarind (Imli), deseeded- 65 gm. / or as desired
Jaggery (Gur), grated- ½ cup
Red Chilli powder- ½ tsp.
Asafoetida- a pinch
Fennel Seeds, lightly roasted- 01 tsp
Cumin seeds, lightly roasted- ½ tsp.
Dry Ginger powder- 1/4th tsp.
Rock Salt- to taste
Salt- to taste
Method:
In a heavy bottomed sauce pan add all the ingredients mentioned from dates to salt with 2 ½ cups of water and simmer for 20 minutes.
Cool and strain the mixture through a soup / sauce strainer. Set aside to cool
Store refrigerated and use as and when required.
Chefs Tip:
The consistency may be adjusted as required i.e. thick or thin.
