A potato fan, nothing can beat this for a perfect dinner side dish , baked to perfection loaded with the flavor of cilantro.
Preparation Time: 10 minutes
Baking Time: 30 to 35 minutes at 400◦ F
Serves: 4
Ingredients and Quantity:
Baby potatoes- 500 gm.
Extra Virgin Olive oil- 02 tbsp.
Kosher Salt- To taste
Black peppercorns, freshly ground- 1/2 tsp.
Cilantro, finely chopped- 02 tbsp
Oregano, dried- 01 tsp.
Chilli flakes- 3/4th tsp.
Method:
- Preheat the oven to 400◦ degrees.
- Rinse and dry the potatoes.
- Divide the olive oil into two glass bowls.
- With a small paring knife, cut small slits through each potato, ensuring that you don’t cut through the bottom.
- Arrange the potatoes on a baking sheet. Brush each potato with the olive oil. Sprinkle salt and pepper.
- Bake for 20-25 minutes.
- Add the oregano, chilli flakes and cilantro to the remaining olive oil.
- Re bake for another 08- 10 minutes.
- When done, garnish with a Cilantro and oregano.
- Serve sizzling hot.
Chef Tips:
- You may replace olive oil with butter.
- You may add fresh herbs instead of dried
