Mind-Boggling smooth ,creamy and light mousse to tantalize your taste buds with the dual flavour of Chocolate and Coffee and crunchiness of toasted walnuts.
Preparation Time: 20 minutes
Cooking Time (Double boiler): 02-03 minutes
Chilling in refrigerator- 02 hours
Serves: 4
Ingredients and Quantity:
Chocolate, dark , coarsely chopped- 150 gm
Melted Chocolate-08 tsp.
Milk, warm-40 ml.
Cocoa powder- 20 gm.
Egg yolks-03 nos.
Sugar- 90 gm. / as desired
Instant coffee- 01 tsp.
Walnuts, toasted, chopped-15 gm.
Egg whites-01 no
Salt- a pinch
Fresh cream, chilled and whipped -1/4th cup
Sugar, granulated- 30 gm.
For the Garnish:
Chocolate, shavings- 02 tsp.
Instant Coffee powder- 1/4th tsp.
Walnuts, lightly tasted- 10 gm.
Method:
Place chocolate in a glass bowl over a double boiler, whisk and stir occasionally until chocolate is melted and smooth, about 02 minutes.
Add milk to chocolate, stirring to combine. Add in cocoa powder and continue to whisk until well combined and ensure that it does not form lumps. Set aside.
Place yolks and sugar in bowl blend on medium speed until thick and pale, about 03 to 04 minutes. Fold in the mixture into chocolate, then stir in the coffee and salt; set aside.
Place the egg white and a pinch of salt in a bowl and whisk till it forms reaches a hard peak. Add the remaining sugar and whisk until for 02 minutes. Fold into chocolate mixture, now fold in the whipped cream and chopped walnuts. Pour into 04 serving glasses the melted chocolate , then the mixture and refrigerate until firm about 02 hours.
Serve Chilled garnished with Chocolate Shavings, Coffee Powder and Walnuts.
