A vibrantly-colored soup with a unique flavor of green peas, roasted pears, mint and is creamy in texture, flavored with, mixed herbs.

Serves-4
Ingredients and Quantity:
Frozen peas-02 cups
Pears, peeled, cored, cubed and oven roasted-01 no. small
Vegetable Stock-1 ½ cups
Water-as required
Onion, chopped-01 small
Garlic-02 cloves
Mint, fresh- 10 sprigs
Parsley fresh- 1/4th bunch
Mixed Herbs, dried – ½ tsp.
Extra virgin Olive oil-1/4 th tbsp.
Salt-To taste
Black pepper powder-1/4th tsp.
For the Garnish:
Fresh cream-10 ml.
Green peas, blanched-20 gm.
Black pepper powder- a pinch
Mixed Herbs, dried- ¼ th tsp
Method:
- In a saucepan heat the oil add onion and garlic, cook over medium-low heat for 5 minutes, until softened, do not brown.
- Add the vegetable stock and water and boil.
- Add the peas, roasted pears and cook for 5 minutes, until the peas are very tender. Remove the saucepan from the flame, add fresh herbs, dried mixed herbs, salt, pepper, and adjust for seasonings.
- Puree the mixture till smooth and creamy. Adjust consistency and seasoning if required.
- Serve hot, warm or even chilled as desired, drizzled with fresh cream, green peas and sprinkled with black pepper powder and dried herbs.
