Kesar Peda has the flavors of saffron and green cardamom lacing it the extreme richness of mawa, it is soft and usually prepared during festivals. It may also be served as desserts.
Preparation Time: 05 minutes
Cooking Time : 08-10 minutes
Makes: 08 pedas
Ingredients and Quantity:
Khoya (Mawa), grated- 01 cup
Sugar- 1/4th cup
Milk, warm- ¾ th tsp.
Saffron –01 gm.
Green Cardamom powder-1/2 gm.
Clarified butter- as required to grease the tray.
For Garnish:
Pistachio nuts, slivered-
Saffron, broiled-1/4 th gm.
Method:
- In a small bowl add warm milk and steep the saffron in it to extract maximum color and flavor.
- In a heavy bottomed pan, cook the grated mawa for 08 minutes.
- Stir Continuously.
- Add the sugar and mix well until it dissolves completely.
- Switch off the flame, add the saffron-milk and green cardamom powder.
- Mix well. Set aside to let it cool.
- Transfer this mixture in a greased tin, and spread evenly with the help of a spatula.
- Divide the mixture into 08 equal parts.
- Shape it into round shape and then gently flatten them.
- I have used peda cutters to get the perfect round shape.
- Garnish with Saffron and slivered pistachio nuts.
- Serve or you may refrigerate it in an airtight container.
Chef Tip:
- You may make beautiful designs and impressions using star or flower stencils.
