Assorted Vegetables marinated with BBQ Sauce and grilled to perfection.
Preparation Time: 1 ½ -02 hours.
Cooking Time: 10 minutes.
Serves: 6
Ingredients and quantity:
Eggplant, diced- 01 no. (Optional)
Red bell pepper, diced- 01 no.
Yellow bell pepper, diced- 01 no.
Green capsicum, diced- 01 no.
Broccoli, florets- 02 cups
Zucchini yellow, diced- 01 no.
Zucchini green, diced- 01 no.
Carrot, diced- 01 no.
Baby corn, diced- ½ cup
Mushrooms, halved- ½ cup
Red onion, diced- ½ cup
Tofu / cottage cheese, cubed- ¾ th cup
For the marination:
Extra Virgin Olive oil- 01 tbsp.
BBQ sauce- 1 ½ tbsp.
Balsamic vinegar- 02 tbsp.
Soya sauce- ½ tbsp.
Italian dried herb blend- 01 tsp.
Black pepper- ½ tsp.
Salt- to taste
Sugar/ honey- to taste
For basting/ brushing the vegetables and grills:
Extra virgin olive oil- ½ tbsp.
For the garnishing:
Parsley, chopped- 1/4th bunch, small
Method:
Toss vegetables in olive oil, balsamic, soya sauce, spices & sugar/ honey.
Seal with a cling wrap and refrigerate for 01- 1 ½ hour.
Brush or spray grill with olive oil.
Place vegetables directly on grill in a grilling basket or on skewers on medium/high heat.
Flip after 05 minutes each side, or until desired doneness.
For the serving:
Serve hot garnished with chopped parsley.
Chefs tip:
- You may use more vegetables as desired, for e.g. Cherry tomatoes.
- Increase the marination time, if required.
- You may blanch the broccoli and carrots refresh n then marinate them.
- You may add minced garlic in the marination to further enhance its flavor.
