Rajgira Halwa

Divine and Scrumptious halwa which melts in the mouth, prepared with rajgira flour cooked in pure ghee , milk, sweetened with sugar and  flavored with green cardamom powder and garnished with nuts.

Preparation Time-05 minutes

Cooking Time- 15 minutes

Serves- 4

Ingredients and Quantity:

Full Cream Milk -02 cups

Granulated Sugar -05 tbsp.

Clarified butter-04 tbsp.

Rajgira Flour (Amaranth Flour) – 01 cup

Fresh Green Cardamom Powder- ½ tsp

Almonds, slivered and sautéed – 08 nos.

Cashew nuts, sautéed -08 nos.

Raisins, sautéed till it puffs- 12 nos.

Method:

In a heavy bottomed pan add milk and let it boil, add sugar and let it dissolve completely. Switch off the flame.

Heat Clarified butter in a non-stick pan add Rajgira flour,cook on a medium flame until light brown, keep stirring in order to prevent it from burning. Once the raw aroma of the flour disappears and it starts giving toasted nutty aroma , set aside from the flame add milk and stir vigorously to avoid lumps, place on the flame, keep stirring add the sautéed nuts reserving some for garnish. Add cardamom powder, cook the halwa till all the milk is absorbed and the clarified butter starts oozing out of the pan.

Serve hot garnished with nuts.
