
A Thirst Quencher in Scorching SUMMERS….
Bengal’s very own version of buttermilk, Gondhoraj Ghol (গন্ডোরাজ গোল) is a refreshing concoction of home-set curd, sugar, black salt, iced water, and the main star of the drink (Ghol) is the pulpy juice of the heavenly Gondhoraj lemon.. “The King of Lemons” … King of Fragrances. This oblong-shaped lemon has mid-boggling aroma and an unusual amazing flavour similar that to the kaffir lime.

Ingredients and Quantity:
Home-set curd , refrigerated after setting- 1 ½ cup
Sugar- 4 tbsp. / or more as desired
Ice cold water- 450 ml.
Gondhoraj Juice- 2 Lemons
Zest of Gondhoraj -2 tsp.
Black salt- 1/2 tsp. / or more as desired.
Ice cubes / Crushed Ice- 16 / or more, as desired (Optional)
For the Garnish:
Zest of Gondhoraj Lemon- 1 tsp.
Method:
With the help of a blender, blend the curd, sugar and black salt.
After a minute, add the chilled water and the zest of Gondhoraj.
Whiz it again until the Ghol is frothy.
Add the Gondhoraj juice, use a stirrer and stir.
Do not blend it, as the ghol has to be frothy.
Add the Ice cubes in serving glasses / Kulhads.
Pour into serving glasses / Kulhads, top it with the zest.
Served chilled.

Chef Tip:
You may cut a leaf of the Gondhoraj into thin strips and add to the drink (Ghol) , to further enhance its flavour and fragrance.
