This immensely popular very quick and very easy to make…. is simply aromatic, flavorful and delectable, loaded with stir-fried veggies and is served very hot. You may serve it with any oriental gravy of your choice in this chilling weather.

Serves- 4
Ingredients and Quantity:
Cooked rice, Al dente -02 cups
Spring onions, finely chopped-04 nos.
French beans, chopped- 12 nos.
Carrot finely chopped -01 medium
Green capsicum, finely chopped-01 medium
Cabbage chopped -1/4 medium
Celery, chopped- 01 stem
Boiled corn- 02 tbsp. (Optional)
Spring onion greens sliced -02 stalks
Sesame oil -03 tbsp.
Ginger, finely chopped- 1 inch piece
Garlic cloves finely chopped- 4 nos.
Salt -to taste
White pepper powder – ½ tsp.
Light soy sauce-01 tsp.
White vinegar- 1/2 tablespoon
Method:
Heat oil in a wok, add ginger and garlic and stir-fry for a minute. Add onions, French beans, carrot, green capsicum, cabbage and half the spring onion greens. Stir-fry for 02 minutes.
Now add the chopped celery. Sauté for ½ a minute . add boiled corn.
Add salt, white pepper powder and soy sauce and mix thoroughly.
Add the rice and adjust the seasonings.
Stir in the vinegar and cook for a minute, stirring continuously.
Garnish with remaining spring onion greens and serve hot.
Chef Tips:
- Rice is prepared by draining method in the ratio 1: 6 1 part of rice to 6 parts of water. Rice needs to be cooked till Al dente ( Just cooked).
- Drain the rice and spread over a flat surface so that it cools down completely and a perfect texture can be obtained.
- You may add blanched bean sprouts too while sautéing the vegetables, if desired.
- If you want the rice to be spicy you may add chilli vinegar or chilli sauce as desired.
