A rich creamy soup prepared with Broccoli, cilantro , shallots and spring onion greens, seasoned with freshly ground black peppercorn, garnished with fresh cream, spring onion greens and crispy shallot rings.

Serves: 4
Ingredients and Quantity:
Broccoli, roughly chopped (excluding the stems)- 550 gm.
Cilantro, fresh- 1/4th bunch
Shallots, chopped- 25 gm.
Garlic- 02 cloves
Extra Virgin Olive oil- 20 ml.
Salt- To taste
Black peppercorn, freshly ground- To taste
Vegetable Stock- 02 cups or as required
For the Garnish:
Fresh Cream- 02 tsp
Black sesame seeds, lightly toasted- 01 tsp.
Spring onion greens- 01 tbsp.
Shallot ring, deep fried till light golden brown- 1 ½ tbsp.
Method:
In a non-stick pan add olive oil heat it for few seconds add the garlic. Sauté till light brown, add the shallots sauté for 1 minute, add the chopped broccoli sauté for 2 minutes, and add the roughly chopped cilantro. Cook for few seconds.
Add stock, salt, pepper and bring it to a boil. Lower the flame and cook till the broccoli is bright green in colour.
Strain through a soup strainer, do not discard the water.
Cool the ingredients.
Puree the ingredients by adding the remaining stock. Simmer the soup for 02 minutes.
Serve very hot / warm in a soup bowl / mugs garnished with lightly toasted black sesame seeds, fresh cream, spring onion greens and crunchy shallot rings.
Chef Tips:
- You may add more vegetable stock, to adjust the consistency.
- Do not prepare the soup covered as the soup will be of a pale green colour instead of a beautiful bright green colour.
