Kesar Badam Doodh

Saffron flavored milk with a kick of ground almonds and served warm / chilled laced with silver leaf and saffron.

Preparation Time: 10 minutes

Cooking Time: 15 minutes

Chilling time: 30 minutes

Serves: 4

Ingredients and quantity:

Milk, full fat-1.5 liters

Almonds blanched, peeled and ground to paste-1/2 cup

Saffron-02 gm.

Sugar- as required / or honey

Green cardamom powder- ¾ th tsp

Rose water- 10 ml.

For the Garnish:

Almonds, blanched peeled and slivered- 02 tsp

Saffron, broiled- ½ gm.

Silver Leaf- 01 sheet small (Optional)

Method:

  1. Soak saffron warm milk to extract maximum flavor and color.
  2. In a heavy bottomed pan, bring milk to boil.
  3. Simmer for 10 minutes. Add almond to the milk stirring continuously until mixed well.
  4. Add saffron mixture. Simmer until milk is reduced to ¾ th.
  5. Add sugar / honey as desired, green cardamom powder, rose water and mix well.
  6. Simmer for 02 minutes.
  7. Switch off the flame and set aside.
  8. Cool completely. Refrigerate and chill for 30 minutes.
  9. Pour in serving glasses, garnish with slivered almonds and saffron. Apply silver leaf.
  10. Serve chilled in summers and hot during winters or rainy days.

 Chef Tips:

  1. You may grind the almonds coarsely instead of a smooth paste.
  2. You may increase the quantity of almonds that is less during summers and more during winters,
