Saffron flavored milk with a kick of ground almonds and served warm / chilled laced with silver leaf and saffron.

Serves: 4
Ingredients and quantity:
Milk, full fat-1.5 liters
Almonds blanched, peeled and ground to paste-1/2 cup
Saffron-02 gm.
Sugar- as required / or honey
Green cardamom powder- ¾ th tsp
Rose water- 10 ml.
For the Garnish:
Almonds, blanched peeled and slivered- 02 tsp
Saffron, broiled- ½ gm.
Silver Leaf- 01 sheet small (Optional)
Method:
- Soak saffron warm milk to extract maximum flavor and color.
- In a heavy bottomed pan, bring milk to boil.
- Simmer for 10 minutes. Add almond to the milk stirring continuously until mixed well.
- Add saffron mixture. Simmer until milk is reduced to ¾ th.
- Add sugar / honey as desired, green cardamom powder, rose water and mix well.
- Simmer for 02 minutes.
- Switch off the flame and set aside.
- Cool completely. Refrigerate and chill for 30 minutes.
- Pour in serving glasses, garnish with slivered almonds and saffron. Apply silver leaf.
- Serve chilled in summers and hot during winters or rainy days.
Chef Tips:
- You may grind the almonds coarsely instead of a smooth paste.
- You may increase the quantity of almonds that is less during summers and more during winters,
