Baked Baby Potato Salad

Do you Skip your meals ???? Have this delectable and loaded with flavors salad, prepared with, oven baked baby potatoes, tomatoes, thyme, oregano, smoked paprika and sprinkled with freshly ground black pepper drizzled with extra virgin olive oil and lemon juice.

Preparation Time: 10 minutes

Cooking Time: 25 minutes

Serves: 4

Ingredients and Quantity:

Baby Potatoes- 300 large

Tomatoes, deseeded and cubed- 02 nos. medium sized

Oregano, fresh- 04 sprigs.

Thyme, fresh- 06 sprigs

Smoked paprika – ½  tbsp.

Salt- To taste

Black pepper, freshly ground- 1/4th tsp

Extra virgin Olive Oil- 01 tbsp.

Lemon Juice-01 tsp.

For the base:

Lettuce- 01 small bunch

Method:

  1. Preheat the oven to 400◦ F.  Place the cubed / roundels of baby potatoes on a greased baking sheet.
  2. Bake until the potatoes are easily pierced with a knife and cooked through evenly, about 20 minutes. Remove from the oven.
  3. In a glass bowl, mix together all the ingredients from cubed tomatoes to olive oil.
  4. Pour the mixture over the baked sweet potatoes and bake for another 05 minutes.
  5. Sprinkle lemon juice and toss the salad.
  6. Place warm salad on a bed of lettuce.
