Loaded with flavors salad prepared with ,oven baked sweet potatoes , sun-dried tomatoes, cilantro, oregano,smoked paprika peanuts and sprinkled with chili flakes drizzled with extra virgin olive oil and lemon juice.

Ingredients and Quantity:
Sweet Potatoes- 02 large
Sun-dried tomatoes- 30 gm.
Oregano, dried- 01 tsp.
Cilantro, chopped- ¼ th bunch
Smoked paprika peanuts- 01 tbsp.
Salt- To taste
Black pepper, freshly ground- 1/4th tsp
Lemon Juice-01 tsp.
Extra virgin Olive Oil- 01 tbsp.
For the base:
Lettuce- 01 small bunch
Method:
- Preheat the oven to 400◦ F. Place the cubed / roundels of sweet potatoes on a greased baking sheet.
- Bake until the sweet potatoes are easily pierced with a knife and cooked through evenly, about 20 minutes. Remove from the oven.
- In a glass bowl, mix together all the ingredients from sun-dried potatoes to olive oil.
- Pour the mixture over the baked sweet potatoes and bake for another 05 minutes. Place the salad at room temperature or warm on a bed of lettuce.
