Oven Baked sweet potatoes stuffed with creamy cottage cheese, sun-dried tomatoes, cilantro, oregano and sprinkled with chili flakes drizzled with extra virgin olive oil.

Cooking Time: 30 to 40 minutes

Ingredients and Quantity:
Sweet Potatoes- 04 small
Cottage cheese, roughly cubed / crumbled- 60 gm.
Sun-dried tomatoes- 30 gm.
Oregano, dried- 01 tsp.
Cilantro, chopped- ¼ th bunch
Salt- To taste
Black pepper, freshly ground- 1/4th tsp
Extra virgin Olive Oil- 01 tbsp.
Method:
- Preheat the oven to 400◦ F. With the help of a fork, pierce each sweet potato Place them on a greased baking sheet.
- Bake until the sweet potatoes are easily pierced with a knife and cooked through evenly, about 35-40 minutes. Remove from the oven and set aside to cool.
- In a glass bowl, mix together all the ingredients except sweet potatoes.
- Slice sweet potatoes lengthwise down the center, top with the prepared mixture and serve hot.
