Usually people prefer preparing this delectable sweet with Whole Wheat Flour. 1 1\/4<sup>th<\/sup> cups.<\/p>\n<p>Milk- 02 tbsp to grind Urad dal + 1\/4 th tbsp. to clarify sugar syrup.<\/p>\n<p>Bengal Gram Flour (Besan) &#8211; 01 tbsp.<\/p>\n<p>Whole Wheat Flour (Atta), preferably Punjabi Atta- \u00bd tbsp.<\/p>\n<p>Semolina (Sooji) &#8211; 2 \u00bd tbsp.<\/p>\n<p>Khoya (Mawa), grated- 3\/4<sup>th<\/sup> Cup<\/p>\n<p>Clarified Butter (Desi Ghee) \u2013 \u00bd Cup<\/p>\n<p>Sugar- 01 cup<\/p>\n<p>Green Cardamom Powder- 1\/4<sup>th<\/sup> tsp.<\/p>\n<p><strong>For the Garnish:<\/strong><\/p>\n<p>Almonds, halved and lightly saut\u00e9ed in pure ghee- 02 tbsp.<\/p>\n<p>Pistachio nuts, chopped coarsely- 01 tbsp.<\/p>\n<p>Sunflower seeds, lightly toasted- 1\/4<sup>th<\/sup> tbsp.<\/p>\n<p><strong>Method:<\/strong><\/p>\n<p>Wash the Urad dal and soak it for 2 \u00bd hours.<\/p>\n<p>Drain and Wash the dal again.<\/p>\n<p>Grind into a smooth paste with the help of milk.<\/p>\n<p>In a heavy bottomed pan, heat ghee add Bengal gram flour, semolina and whole wheat flour.<\/p>\n<p>Over medium heat saut\u00e9 till the flours turn in to light brown in colour.<\/p>\n<p>Add grated khoya, keep stirring and saut\u00e9 till light brown in colour and till it blends well with the flours.<\/p>\n<p>Add the ground dal, saut\u00e9 for almost 10 minutes. Add more clarified butter if required.<\/p>\n<p>Ensure that you keep stirring the mixture, in order to prevent it from burning.<\/p>\n<p>Let it cook for another 15 to 20 minutes \u00a0on a low flame, till the raw aroma disappears and it turns into light brown in colour.<\/p>\n<p>Add Cardamom powder. Remove from the flame and set aside.<\/p>\n<p>Prepare sugar syrup of one string consistency.<\/p>\n<p>Place the cooked pinni mixture on the flame add the sugar syrup and ensure that you stir it as it might form lumps. Once it thickens. Remove from the flame.<\/p>\n<p>Take a Stainless Steel tray and pour this thick mixture you may form balls or give different shapes to the pinni.<\/p>\n<p>Garnish it with Almonds, Pistachio nuts and Sunflower seeds.<\/p>\n<p><strong>Chef Tips:<\/strong><\/p>\n<ol>\n<li>Use a heavy bottomed pan to prepare pinni as it may stick to the bottom of the pan and get burnt.<\/li>\n<li>For the Sugar Syrup: Ratio of sugar to water may be varied from 2:1 i.e. two parts of sugar to one part of water to 1:1 One part of sugar to one part of water. 3 \u00bd cups of sugar to 3 \u00bd cups of water.<\/li>\n<li>Add a few drops of milk to clarify the sugar syrup, remove the scum from the top and discard the scum.\u00a0 Before adding the sugar syrup, strain it through a muslin cloth.
