\/><\/p>\n<p><strong>Preparation Time: 25 minutes<\/strong><\/p>\n<p><strong>Grilling Time: 10 to 15 minutes<\/strong><\/p>\n<p><strong>Serves: 04<\/strong><\/p>\n<p><strong>Ingredients and Quantity:<\/strong><\/p>\n<p><strong><u>For the Kolhapuri Masala:<\/u><\/strong><\/p>\n<p>Oil- 2 tbsp.<\/p>\n<p>Onion, sliced -01 no.<\/p>\n<p>Garlic \u2013 2 cloves<\/p>\n<p>Ginger- 1 inch piece<\/p>\n<p>Salt- \u00bd tsp.<\/p>\n<p>Dried coconut ( khopra) grated\u00a0\u2013 1 tbsp.<\/p>\n<p>Fresh coriander leaves, chopped- 1\/4<sup>th<\/sup> cup<\/p>\n<p>Asafoetida- a pinch<\/p>\n<p>Dry roast separately and powder:<\/p>\n<p>Bedgi whole dry chillies\u00a025 gm.<\/p>\n<p>Shankeshwari whole red chillies- 20 gm.<\/p>\n<p>Coriander seeds- 1 \u00bd tbsp.<\/p>\n<p>Stone Flower (Dagad Phool)- \u00bd tbsp.<\/p>\n<p>Triphal- 06 nos.<\/p>\n<p>Sesame seeds (til)\u00a0\u00bd tbsp.<\/p>\n<p>Poppy seed (khuskhus)\u00a01\/2 tbsp.<\/p>\n<p>Bay leaf -2 nos.<\/p>\n<p>Cinnamon\u00a01 inch piece<\/p>\n<p>Caraway seed (shahi jeera) powder\u00a01 tsp.<\/p>\n<p>Star Anise- 2 nos.<\/p>\n<p>Fennel- 1\/4<sup>th<\/sup> tbsp.<\/p>\n<p>Fenugreek seeds- \u00bc th tsp.<\/p>\n<p>Clove\u00a02 nos.<\/p>\n<p>Mace\u00a01 blade<\/p>\n<p>Nutmeg grated- 1\/4<sup>th<\/sup> tsp.<\/p>\n<p>Turmeric- 1\/4<sup>th<\/sup> tsp.<\/p>\n<p>Black peppercorns-\u00a06 nos.<\/p>\n<p>Cumin seeds\u00a01\/4<sup>th<\/sup> \u00a0tbsp.<\/p>\n<p>Mustard seeds- \u00bc th tsp.<\/p>\n<p>Dry ginger- 1\/4<sup>th<\/sup> tsp.<\/p>\n<p>Black cardamom\u00a02 nos.<\/p>\n<p>Green cardamom -01 no.<\/p>\n<p><strong><u>For the Grilled Corn on the Cob:<\/u><\/strong><\/p>\n<p>Corn on the cob, husks removed- 4 nos.<\/p>\n<p>Butter , room temperature- 6 tbsp.<\/p>\n<p>Lemon juice 02 tbsp.<\/p>\n<p>Salt if required<\/p>\n<p>Fresh Coriander Leaves, finely chopped- \u00bd tbsp.<\/p>\n<p>Lemon wedges- 4 nos.<\/p>\n<p>Method:<\/p>\n<p><strong>For the Kolhapuri Masala:<\/strong><\/p>\n<p>Heat oil in a non-stick pan add sliced onion , ginger, garlic, salt and grated dry coconut. Cook till light brown. Grind it with coriander leaves and add asafoetida. To this add the dry roasted and powdered masala . Combine well. Store it in an airtight and dry glass jar. Can be used for 6 to 7 months.<\/p>\n<p>For the Grilled Corn on the Cob:<\/p>\n<p>Preheat the grill to medium high heat.<\/p>\n<p>Place each cob on the grill and cook for approx. 15 mins, turning every 5 mins to char sides evenly.<\/p>\n<p>To prepare the rub mix butter, salt, lemon juice and Kolhapuri masala.<\/p>\n<p>To serve, rub the butter over the corn cobs, sprinkled with finely chopped coriander leaves and serve with extra lemon wedges.<\/p>\n<p><strong>Chef Tips:<\/strong><\/p>\n<ol>\n<li>Kolhapuri masala has salt added to it already; therefore ensure that you apply less salt to the grilled corn on the cob.<\/li>\n<li>Prepare and store the Kolhapuri Masala in a dry and clean airtight glass jar and use it as and when required.
