Indubitably the best creamy sweet dessert in an Earthenware Pot.<\/strong><\/p>\n

A rich and rustic frozen dessert that is made with reduced full cream milk with the incorporation of ripe Jackfruit puree and loads of nuts \u2026laced with Saffron.<\/strong><\/p>\n

Is served chilled garnished with nuts and dried and edible rose petals in the Earthenware Pots (Matka)\u2026..<\/strong><\/p>\n

Preparation Time:<\/strong> 20 minutes<\/p>\n

Cooking Time:<\/strong> 1 \u00bd to 02 Hours<\/p>\n

Chilling Time in the Freezer:<\/strong> Overnight<\/p>\n

Makes-<\/strong> 06 Small Matkas<\/p>\n

Ingredients and Quantity:<\/strong><\/p>\n

Full Cream Milk- 1 \u00bd litre<\/p>\n

Khoya \/ Mawa, grated- 100 gm.<\/p>\n

Sugar- 30 gm \/ or more as desired<\/p>\n

Pistachio nuts, blanched, peeled and slivered- 02 tsp.<\/p>\n

Pistachio nuts, blanched, peeled and chopped- 01 tsp<\/p>\n

Cashew nuts, chopped-01 tsp.<\/p>\n

Almonds, blanched , peeled and chopped- 02 tsp<\/p>\n

Green Cardamom Powder- \u00bd tsp.<\/p>\n

Saffron strands, steeped in Luke warm Milk- a few strands<\/p>\n

Screw pine water (Kewra water)- 1\/4th<\/sup> tbsp. (Optional)<\/p>\n

Jackfruit, ripe, de-seeded and pureed- \u00bd cup<\/p>\n

For the Garnish:<\/strong><\/p>\n

Pistachio nuts, blanched and slivered- 01 tsp.<\/p>\n

Almonds, blanched , peeled and slivered- 01 tsp<\/p>\n

Saffron strands, steeped in Luke warm Milk- a few strands<\/p>\n

Dried and Edible Rose Petals- 01 tsp.<\/p>\n

\u00a0<\/strong>Method:<\/strong><\/p>\n

In a heavy bottomed non-stick \u00a0pan and pour full cream milk in it.\u00a0Bring it to a boil.<\/p>\n

Simmer the flame, ensure that you stir it and keep scraping the edges and sides of the pan.<\/p>\n

Once the milk reduces to half its quantity. Add grated khoya. Mix well add the sugar and green cardamom powder.<\/p>\n

Now add the saffron,\u00a0 slivered and chopped nuts.<\/p>\n

Add the Screw pine water. (Optional)<\/p>\n

Switch off the flame pour the mixture into a wide glass bowl.<\/p>\n

Let it cool completely.<\/p>\n

Now add the Jackfruit puree.<\/p>\n

Mix well<\/p>\n

Pour this mixture in the Earthenware Pots (Matkas).<\/p>\n

Sprinkle a little nuts and saffron.<\/p>\n

Cover each matka with a small muslin cloth.<\/p>\n

Tie the muslin cloth and leave the to chill in the freezer, overnight.<\/p>\n

Serve it chilled, sprinkled with nuts and dried and edible rose petals.<\/p>\n
