Can we call it a Desi Granola ?? YES Why Not\u2026<\/strong><\/p>\n<p><strong>It is not<\/strong> <strong>only a comfort food, but an excellent nutritional supplement, especially in freezing winters. When consumed it provides warmth to our body in winters. It is a great body warmers in freezing winters. Boosts immunity and helps us fight cold \/ cough and other problems that one may face due to winters.<\/strong> <strong>Everything in Excess is bad , do not consume too much<\/strong><\/p>\n<p><strong>of this delectable Panjiri, as the ingredients incorporated or used in its preparation are of a Garam Taseer \u201cHot in Nature) , foods that have a <\/strong><strong>keep our body warm in freezing winters.. Every food has <\/strong><strong>it&#8217;s unique attribute that definitely leaves a deep impact <\/strong><strong>on our body. Therefore eating in proper quantity is a must.<\/strong><\/p>\n<p><strong>Can be consumed at any time of the day with or without warm milk.<\/strong><\/p>\n<p><strong>You may prepare it in bulk and store and use \/ consume, whenever desired.\u00a0 Store the panjiri in a sterilised and dry air-tight glass jar. You may consume it as and when required.<\/strong><\/p>\n<p><strong>Shelf Life of Panjiri is\u00a03 months at Room Temperature and\u00a06 months if refrigerated.<\/strong><\/p>\n<p><strong>Preparation Time: 15 minutes<\/strong><\/p>\n<p><strong>Cooking Time:\u00a025 minutes<\/strong><\/p>\n<p><strong>Serves:\u00a08<\/strong><\/p>\n<p><strong>Ingredients and Quantity:<\/strong><\/p>\n<p>Whole-wheat flour- 2 cups<\/p>\n<p>Semolina, dry roasted- \u00bd \u00a0cup<\/p>\n<p>Clarified Butter (Desi Ghee)- 12 tbsp.\u00a0 ( \u00be th cup)<\/p>\n<p>Carom seeds (Ajwain), lightly roasted and coarsely ground- 1\/4<sup>th<\/sup>\u00a0tsp.<\/p>\n<p>Dry ginger powder (Sonth)- \u00bd tsp.<\/p>\n<p>Green Cardamom powder- \u00bd \u00a0tsp.<\/p>\n<p>Fennel seed powder- 1\u00a0tsp.<\/p>\n<p>Fenugreek seeds powdered- \u00bd tsp.<\/p>\n<p>Edible gum ( Gondh), cooked in desi ghee for 5 minutes on a slow flame till it swells up, is crisp &amp; doubles in size. Coarsely grind &#8211; 75 gm.<\/p>\n<p>Lotus seeds (Makhana) fried in desi ghee \u00a0and coarsely ground- \u00bd \u00a0tbsp<\/p>\n<p>Raw cane sugar (Desi Khand), powdered\u2013 \u00bd \u00a0cup<\/p>\n<p>Almonds, fried and coarsely ground- 1 tbsp.<\/p>\n<p>Cashew nuts, fried and coarsely ground &#8211; 16 nos.<\/p>\n<p>Almonds, fried &#8211; 1 tbsp.<\/p>\n<p>Cashew nuts, fried &#8211; 16 nos.<\/p>\n<p>Mix Melon seeds (Char-magaz seeds), fried \/ lightly toasted- 1\u00a0tbsp.<\/p>\n<p>Charoli, fried- 15 gm.<\/p>\n<p><strong>Method:<\/strong><\/p>\n<p>In a heavy bottomed non-stick pan, dry roast the whole wheat flour till it gets a nutty aroma i.e. for 12 to 13 minutes.<\/p>\n<p>Add the desi ghee, cook it on a slow flame, till it is well combined.<\/p>\n<p>Add the semolina, stir with a spatula.<\/p>\n<p>You will witness a beautiful light golden brown colour of the flour and semolina, do not overcook, cook for another 5 minutes only till the raw aroma of the flour disappears.<\/p>\n<p>Add the powdered dry ginger, green cardamom, fennel seeds , fenugreek seeds, carom seeds coarsely ground lotus seeds and edible gum.<\/p>\n<p>Now add the coarsely ground nuts, whole fried almonds, cashew nuts, charoli and mixed melon seeds.<\/p>\n<p>Mix well.<\/p>\n<p>Switch off the flame and let it be a little cooler, add the desi khand and mix well till well combined.<\/p>\n<p>Cool the Panjiri completely.<\/p>\n<p>Store it in a sterilized and dry air-tight glass jar.
