They are excellent antioxidants.<\/p>\n<p>Cottage cheese has proteins, Calcium, Phosphorous, Riboflavin and Vitamin B-12.<\/p>\n<p>Sprouted Moong are low in calories, have fibre and B vitamins, and deliver a boost of vitamins C and K.<\/p>\n<p>Lemon is a good source of Vitamin C.<\/p>\n<p>Tomatoes are a great source of vitamin C,\u00a0potassium,\u00a0folate\u00a0and\u00a0vitamin K and are fantastic antioxidants.<\/p>\n<p>Eggs are a very good source of inexpensive, high quality\u00a0protein. More than half the\u00a0protein\u00a0of an egg is found in the egg white along with\u00a0vitamin B2\u00a0and lower\u00a0amounts of\u00a0fat\u00a0and\u00a0cholesterol\u00a0than the yolk. The whites are rich sources of\u00a0selenium, vitamin D, B6, B12 and\u00a0minerals\u00a0such as\u00a0zinc,\u00a0iron\u00a0and copper.<\/p>\n<p>Cherries\u00a0are a good source of fibre, vitamins and minerals, including potassium, calcium, vitamin A and folic acid. They are also well known for their antioxidant properties.<\/p>\n<p>Tamarind\u00a0contains tartaric acid, malic acid, and potassium, which are all components that help promote a healthy digestive system.\u00a0 Aids in digestion of food<\/p>\n<p><strong>Preparation Time: 10 minutes<\/strong><\/p>\n<p><strong>Cooking Time: 15 minutes<\/strong><\/p>\n<p><strong>Serves: 01<\/strong><\/p>\n<p><strong>Ingredients and Quantity:<\/strong><\/p>\n<p>Low- Fat Cottage Cheese, cubed- \u00bd\u00a0 cup.<\/p>\n<p>Mushroom- 06 nos.<\/p>\n<p>Olive Oil- 1\/4<sup>th<\/sup> tbsp.<\/p>\n<p>Mixed Herbs, dried- \u00bd tsp<\/p>\n<p>Garlic powder- 1\/4<sup>th<\/sup> tsp.<\/p>\n<p>Sprouted Moong- \u00bd \u00a0cup<\/p>\n<p>Fresh Cilantro, finely chopped- 08 sprigs<\/p>\n<p>Tomato Quartered- 01 small<\/p>\n<p>Hard Boiled Eggs- 01 no. large<\/p>\n<p>Fresh Cherries- 08 nos.<\/p>\n<p>Salt- To taste<\/p>\n<p>Peppercorn, lightly roasted and freshly ground- \u00bd tsp.<\/p>\n<p>Lemon- 01 no<\/p>\n<p>Sweet Tamarind -02 pieces (To be consumed after consuming the lunch, aids digestion)<\/p>\n<p><strong>Method:<\/strong><\/p>\n<p>Boil eggs in water with 1\/4<sup>th<\/sup> tsp. of salt and \u00bd tsp. of vinegar for 10 minutes. After they are boiled place in cold water and peel \/ shell it and cut into quarters sprinkle the seasonings.<\/p>\n<p>Heat a non-stick pan add extra virgin oil, add the mushrooms saut\u00e9 them till light golden brown, add the cubed cottage cheese , saut\u00e9 for another 2 to 3 minutes. Add dried mixed herbs, garlic powder and seasonings. Keep aside.<\/p>\n<p>Blanch the sprouted moong in hot water till al dente (just done). Wash under cold water. Place in a mesh \/ strainer to remove all the water \/ moisture. Add the cilantro and seasonings.<\/p>\n<p>Divide the lunch box into 03 parts, in the 1<sup>st<\/sup> place the sprouted moong, place the quartered egg , tomatoes and lemon cut into halves on top of it, then the herbed mushrooms and cottage cheese and in the third part place the fresh cherries.<\/p>\n<p>Don\u2019t forget to place 2 sweet tamarind pieces to be consumed after lunch.
