\/><\/a><\/p>\n<p><strong>For the Rabri:<\/strong><\/p>\n<p><strong>Preparation Time:<\/strong>\u00a015 minutes.<br \/>\n<strong>Cooking Time:<\/strong>\u00a001 to 1 \u00bd hour.<br \/>\n<strong>Refrigeration time-<\/strong>\u00a002-03 hours (Optional).<\/p>\n<p><strong>For the Malpuas:<\/strong><\/p>\n<p><strong>Preparation Time: <\/strong>5 minutes<\/p>\n<p><strong>Cooking Time: <\/strong>10 minutes<\/p>\n<p><strong>Makes: <\/strong>15 malpuas<\/p>\n<p><strong>Ingredients and Quantity:<\/strong><\/p>\n<p><strong>For the Rabri:<\/strong><\/p>\n<p>Low fat milk- 05 cups<br \/>\nStevia- \u00bd tsp.<\/p>\n<p>Pistachio nuts, blanched, peeled and chopped-10 gm.<br \/>\nAlmonds, blanched, peeled and chopped- 10 gm.<\/p>\n<p><strong>For the Flavouring of Rabri:<\/strong><\/p>\n<p>Saffron, broiled -01 gm.<br \/>\nGreen Cardamom powder- \u00bc th tsp.<\/p>\n<p><strong>For the Malpuas:<\/strong><\/p>\n<p>Whole Wheat Flour- 1 cup<\/p>\n<p>Fennel Seeds, lightly toasted- \u00bc th tbsp.<\/p>\n<p>Black Pepper corns, crushed- 1\/4<sup>th<\/sup> tsp.<\/p>\n<p>Organic Honey- 1\/2 cup<\/p>\n<p>Water- 1\/2 cup<\/p>\n<p>Cinnamon Stick- \u00bd inch<\/p>\n<p>Saffron- \u00bc th gm.<\/p>\n<p>Rose Water- 10 ml.<\/p>\n<p><strong>For the finishing \/ serving:<\/strong><\/p>\n<p>Silver leaf -01 sheet<\/p>\n<p>Rose petals, dried edible- -3 tsp<\/p>\n<p>Almonds, slivered- 02 tsp.<\/p>\n<p>Pistachio nuts, slivered- 02 tsp<\/p>\n<p><strong>Method:<\/strong><\/p>\n<p><strong>For the Rabri:<\/strong><\/p>\n<p>In a heavy bottomed pan, add milk, bring to a boil.<br \/>\nAdd the stevia and cardamom powder and simmer over low flame \/ heat.<br \/>\nDo not stir too often, as a layer of cream should form over it.<br \/>\nAfter the layer is formed, keep pushing it away from the sides towards the centre with the help of a wooden spatula<br \/>\nKeep stirring the milk below it gently to avoid scorching \/ burning. Add broiled saffron strands.<br \/>\nRepeat the process till 1\/3 rd of the volume of milk is left.<br \/>\nThe wider the vessel, the faster it will thicken.<br \/>\nWhen done, the colour changes to a beige-cream \/ off white, and the cream that was pushed aside, collects in layers. Add the chopped nuts.<br \/>\nRemove from the flame. Let it cool. Set aside<\/p>\n<p><strong>For the Maluas:<\/strong><\/p>\n<p>Take one cup water and add the honey to it. Add cinnamon, Saffron and rose water. Reduce it. Remove the cinnamon stick.<\/p>\n<p>Pour in a glass bowl and add let it cool completely. You may reserve some for drizzling on top of the prepared malpuas.<\/p>\n<p>Now add lightly toasted fennel seeds, crushed pepper corns, whole wheat flour and \u00bd cup of water.<\/p>\n<p>Whisk thoroughly to get a smooth batter.<\/p>\n<p>In a Hard anodized non-stick pan, pour a ladleful of this batter, spread the batter a little with the ladle and cook on both the sides.<\/p>\n<p>Remember to use a wooden spoon to turn the malpuas so that they are cooked thoroughly \/ evenly on both the sides.
