{"id":5625,"date":"2017-07-15T16:41:38","date_gmt":"2017-07-15T16:41:38","guid":{"rendered":"https:\/\/chefreetuudaykugaji.com\/blog\/?p=5625"},"modified":"2017-11-22T08:14:55","modified_gmt":"2017-11-22T08:14:55","slug":"khandvi","status":"publish","type":"post","link":"https:\/\/chefreetuudaykugaji.com\/blog\/2017\/07\/15\/khandvi\/","title":{"rendered":"Khandvi"},"content":{"rendered":"<div id=\"id_59722ca44d08c2483985535\" class=\"text_exposed_root text_exposed\">\n<p><strong>A mouth-watering traditional Gujarati tea time snack, delicious savoury made with gram flour and buttermilk tempered with asafoetida and mustard seeds and garnished with grated coconut and finely chopped coriander leaves.<\/strong><\/p>\n<p><strong>Preparation Time: <\/strong>30 minutes<\/p>\n<\/div>\n<div class=\"text_exposed_root text_exposed\"><span class=\"text_exposed_show\"><span class=\"text_exposed_show\"><strong>Cooking Time: <\/strong>20 minutes<br \/>\n<strong>Serves:<\/strong> 4<\/span><\/span><strong>Ingredients and Quantity:<\/strong>Bengal Gram flour (besan)-1 \u00bc cups<br \/>\nSour Buttermilk- 03 Cups<br \/>\nGinger- One-inch pieces<br \/>\nGreen chillies- 02 Nos.<br \/>\nOil- 02 tablespoons<br \/>\nSalt- to taste<br \/>\nTurmeric powder- \u00bd teaspoon<br \/>\nLemon juice- 01 tablespoon<\/p>\n<p><strong>For tempering:<\/strong><\/p>\n<p>Oil- 02 tablespoons<br \/>\nAsafoetida- A pinch<br \/>\nMustard seeds- 01 teaspoon<\/p>\n<p><strong>For Garnish:<\/strong><br \/>\nCoconut grated- 02 teaspoons<br \/>\nFresh green coriander leaves chopped finely- A few sprigs<\/p>\n<p><strong>Method:<\/strong><\/p>\n<p>In a bowl ,sieve besan .Grind ginger and green chillies.<br \/>\nOil the reverse side of a few Stainless steel thalis or marble table top with a little oil.<br \/>\nMix the besan with ginger-green chilli paste, salt, turmeric powder, lemon juice and buttermilk, taking care that no lumps are formed \/ remain.<br \/>\nCook this mixture, stirring continuously, in a thick bottomed pan till it becomes a smooth thick batter. It takes a little time to get ready.<br \/>\nQuickly spread portions of the mixture over the oiled inverted thalis or marble table top as thinly as possible while the batter is still hot.<br \/>\nWhen cool, cut into strips two inches wide and roll them tightly.<br \/>\nHeat two tablespoons of oil and add a pinch of asafoetida and mustard seeds.<br \/>\nWhen they splutter, pour over the pieces.<br \/>\nServe immediately garnished with grated coconut and finely chopped green coriander leaves.<br \/>\nGoes best with coriander chutney or coriander mint chutney or garlic chutney.<\/p>\n<p><strong>Chef Tips :<\/strong><br \/>\nMaking Khandvi is an art. It takes some practice to get the correct consistency after cooking.
