{"id":5574,"date":"2017-08-09T13:34:05","date_gmt":"2017-08-09T13:34:05","guid":{"rendered":"https:\/\/chefreetuudaykugaji.com\/blog\/?p=5574"},"modified":"2017-11-22T07:42:15","modified_gmt":"2017-11-22T07:42:15","slug":"schezwan-hakka-veg-noodles","status":"publish","type":"post","link":"https:\/\/chefreetuudaykugaji.com\/blog\/2017\/08\/09\/schezwan-hakka-veg-noodles\/","title":{"rendered":"Schezwan Hakka Veg Noodles"},"content":{"rendered":"<p><strong>Quick Indo Chinese recipe loaded with vegetables, noodles\u00a0and\u00a0 spiced with schezwan\u00a0sauce\u00a0<\/strong><\/p>\n<p><strong>Preparation Time:<\/strong> 15 minutes<\/p>\n<p><strong>Cooking Time:<\/strong> 10 to 15 minutes<\/p>\n<p><strong>Serves :<\/strong> 4.<\/p>\n<p><strong>Ingredients and quantity:<\/strong><\/p>\n<p>Hakka noodles -450 gm.<br \/>\nOil -05 tbsp.<br \/>\nOnion sliced -01 medium<br \/>\nCarrot cut into thin strips \/ juliennes -01no. medium<br \/>\nGreen capsicum , stem removed, deseeded &amp;cut into thin strips\/ juliennes-01no. medium<br \/>\nCabbage finely shredded -1\/4 no.small<br \/>\nSoy sauce \u2013 \u00bc th tbsp. (Optional)<\/p>\n<p>Schezuan sauce- 06-08 tbsp.<br \/>\nSalt -to taste<br \/>\nWhite pepper powder -1\/4 tsp.<br \/>\nBean sprouts -1\/2 cup<br \/>\nSpring onion greens finely shredded-01 stalk<\/p>\n<p><strong>For the garnishing: <\/strong><br \/>\nSpring onion greens finely shredded-1\/4 th stalk<\/p>\n<p><strong>Method: <\/strong><br \/>\nBoil water add the noodles, cook till Al dente at least for 02 minutes. Do not over cook the noodles as they will become mushy and sticky.<br \/>\nDrain the noodles and spread on a flat surface and toss in 01 tsp of oil on the noodles to prevent sticking.<\/p>\n<p>Heat oil in a wok, add onion and stir-fry for 03minutes.<br \/>\nAdd carrot, capsicum and cabbage and stir-fry for 02 minutes, stirring and tossing continuously.<br \/>\nAdd noodles, soy sauce, Schezuan sauce, salt to taste and white pepper powder and cook on high flame for 05 minutes or until the noodles are heated through, tossing continuously.<br \/>\nAdd bean sprouts, mix well.<\/p>\n<p><strong>For the serving:<br \/>\n<\/strong>Serve hot garnished with spring onion greens.<\/p>\n<p><strong>Chef Tips:<br \/>\n<\/strong>1. You may add a few drops of oil while boiling Noodles.<br \/>\n2. Al dente refers to the desired texture of cooked pasta in Italian cooking. It literally means &#8220;to the tooth&#8221;. When the pasta is cooked Al dente, there should be a slight resistance in the center when the pasta is chewed.<br \/>\n3. If u like noodles spice then take \u00bc th cup of oil &amp; 06 broken whole red chillies &amp;<\/p>\n<p>Heat the oil in a deep pan on a high flame till it smokes.<br \/>\nAdd the red chillies, cover with a lid and switch off the flame.<br \/>\nAllow it to cool for some time and strain it using a strainer. Keep aside. Use as and when required.<br \/>\n4.
