{"id":5553,"date":"2017-08-06T15:07:13","date_gmt":"2017-08-06T15:07:13","guid":{"rendered":"https:\/\/chefreetuudaykugaji.com\/blog\/?p=5553"},"modified":"2017-11-22T07:50:06","modified_gmt":"2017-11-22T07:50:06","slug":"spiced-beetroot-soup","status":"publish","type":"post","link":"https:\/\/chefreetuudaykugaji.com\/blog\/2017\/08\/06\/spiced-beetroot-soup\/","title":{"rendered":"Spiced Beetroot Soup"},"content":{"rendered":"<p><strong>Scrumptious sweet beetroot soup with the goodness of coconut milk tempered with mustard seeds, crushed cumin seeds, curry leaves and chopped coriander leaves.<\/strong><\/p>\n<p><strong>Preparation Time:<\/strong> 10 minutes<\/p>\n<p><strong>Cooking Time:<\/strong> 15 minutes<\/p>\n<p><strong>Serves:<\/strong> 4<\/p>\n<p><strong>Ingredients and Quantity:<\/strong><\/p>\n<p>Beetroot, boiled, peeled and pureed \u2013 1 \u00bd cups<\/p>\n<p>Yellow Split Moong dal cooked and pureed- \u00bc th cup<\/p>\n<p>Coconut milk, thick- 125 ml<\/p>\n<p>Vegetable stock- 03 cups\/ or more as desired.<\/p>\n<p>Salt to taste<\/p>\n<p><strong>For the tempering:<\/strong><\/p>\n<p>Extra Virgin Olive Oil- \u00bd tbsp.<\/p>\n<p>Mustard seeds- 1 \u00bd tsp<\/p>\n<p>Cumin, crushed-01 tsp.<\/p>\n<p>Curry Leaves, chopped- 01 sprig<\/p>\n<p>Cilantro, chopped- 02 tsp<\/p>\n<p>Curry powder, mixed in a little water- \u00bd tsp<\/p>\n<p>Cashew nuts, roughly chopped- 02 tsp.<\/p>\n<p><strong>Method:<\/strong><\/p>\n<p>In a medium pot, add Beetroot and dal puree with 03 cups of vegetable stock.<\/p>\n<p>Bring to a boil, simmer until a little thick. Add salt to taste.<\/p>\n<p>Simmer, add coconut milk.<\/p>\n<p>Whisk. Remove from the flame. Pour the soup into 04 soup bowls.<\/p>\n<p>In a non-stick pan add oil. Add mustard seeds, let them splutter, add cumin, curry leaves, cilantro, curry powder, mix well.
