{"id":5497,"date":"2017-10-08T05:33:04","date_gmt":"2017-10-08T05:33:04","guid":{"rendered":"https:\/\/chefreetuudaykugaji.com\/blog\/?p=5497"},"modified":"2017-11-23T06:05:21","modified_gmt":"2017-11-23T06:05:21","slug":"chicken-fried-rice","status":"publish","type":"post","link":"https:\/\/chefreetuudaykugaji.com\/blog\/2017\/10\/08\/chicken-fried-rice\/","title":{"rendered":"Chicken Fried Rice."},"content":{"rendered":"<p><strong>Stir-Fried rice prepared with chicken, eggs, spring onions with a dash of Soya Sauce.<\/strong><\/p>\n<p><strong>Preparation Time: 30-35 minutes<\/strong><\/p>\n<p><strong>Cooking Time: 15 minutes<\/strong><\/p>\n<p><strong>Serves:2<\/strong><strong>\u00a0<\/strong><\/p>\n<p><strong>Ingredients and Quantity:<\/strong><\/p>\n<p>Rice\u00a0\u2013 250 gm.<br \/>\nSalt\u00a0\u2013 to taste<br \/>\nSesame oil\u00a0\u2013 02 tbsp.<br \/>\nGarlic paste\u00a0-02 tsp.<br \/>\nSpring onions, chopped very fine\u00a0\u2013 100 gm.<br \/>\nChicken boneless ,cooked and cut into thin strips- \u00bd \u00a0cup<\/p>\n<p>Eggs, whisked lightly- 01 no<br \/>\nCelery, finely chopped\u00a0\u2013 01 stalk<\/p>\n<p>Carrots, small cubes, blanched and refreshed- 01 no. small<br \/>\nSoya sauce- 02 tsp.<br \/>\nVinegar- 01 tsp<br \/>\nChilli sauce- 01 tsp<\/p>\n<p>Hot Water \u2013 06 \/ 08 times the amount of rice as we are preparing by draining maethod<strong>\u00a0<\/strong><\/p>\n<p><strong>For Garnish:<\/strong><\/p>\n<p>Spring onion greens, finely chopped- 01 stalk<\/p>\n<p><strong>For the Accompaniment:<\/strong><\/p>\n<p>Omelette- 01 no.<\/p>\n<p>Cucumber slices- 04 nos.<\/p>\n<p>Spring onion green-01 stalk.<\/p>\n<p><strong>\u00a0<\/strong><strong>METHOD<\/strong><\/p>\n<p>Boil the rice with salt and \u00bd Tbsp. of oil, till \u00be th done in hot water. 1: 8 i.e. 01 part of rice to 08 parts of hot water OR 1: 6 i.e. 01 part of rice to 06 parts of hot water.<br \/>\nDrain and rinse under cold water.<br \/>\nLeave in the colander and drizzle \u00bd Tbsp. of oil into it.<br \/>\nIn a Chinese wok heat the rest of the oil and saut\u00e9 the garlic and onions, till onions are translucent.<br \/>\nAdd the chicken and stir-fry till well mixed.\u00a0Add the whisked egg. Add the carrots (Optional)<br \/>\nAdd the soya sauce, vinegar and chilli sauce, toss well and add the rice.<br \/>\nToss till rice and chicken are well mixed.<\/p>\n<p><strong>For Serving:<\/strong><\/p>\n<p>Serve hot garnished with spring onion greens and accompanied with an omelette, sliced cucumber and spring onion green stalk.<\/p>\n<p><strong>Chef Tips: <\/strong><\/p>\n<ol>\n<li>Mustard oil is heated in the pan with no other ingredients until it reaches a temperature where the first wisps of smoke appear. It is then taken off the flame and allowed to cool a little before adding ingredients to be cooked.
