{"id":5494,"date":"2017-09-07T05:21:37","date_gmt":"2017-09-07T05:21:37","guid":{"rendered":"https:\/\/chefreetuudaykugaji.com\/blog\/?p=5494"},"modified":"2017-11-22T06:11:25","modified_gmt":"2017-11-22T06:11:25","slug":"rogan-josh","status":"publish","type":"post","link":"https:\/\/chefreetuudaykugaji.com\/blog\/2017\/09\/07\/rogan-josh\/","title":{"rendered":"Rogan Josh"},"content":{"rendered":"<p><strong>A treat to your taste buds, a delicious recipe from the paradise Kashmir, prepared with mutton pieces simmered in various Indian spices and yogurt and not to forget the ratanjot infused oil which imparts the rich red colour to the aromatic curry.<\/strong><\/p>\n<p><em>&#8220;<strong>Agar firdaus bar roo-e zameen ast, Hameen ast-o hameen ast-o hameen ast<\/strong>&#8220;<\/em><\/p>\n<p>&#8220;IF THERE IS PARADISE ON FACE OF THE EARTH,<br \/>\nIT IS THIS, IT IS THIS, IT IS THIS\u201d<\/p>\n<p><strong>Preparation Time:<\/strong> 20 minutes<\/p>\n<p><strong>Cooking Time:<\/strong> 02 hours, depending on the quality of mutton.<\/p>\n<p><strong>Serves:<\/strong>\u00a04<\/p>\n<p><strong>Ingredients and Quantity:<\/strong><\/p>\n<p>Mustard oil \u2013 06 tbsp.<\/p>\n<p>Asafoetida- \u00bc tsp.<\/p>\n<p>Cumin seeds &#8211; 01 tsp.<\/p>\n<p>Cinnamon\u00a0\u2013 01 inch piece<\/p>\n<p>Cloves- 04 nos.<\/p>\n<p>Black Peppercorn- 05 nos.<\/p>\n<p>Black Cardamom\u00a0\u2013 04 nos.<\/p>\n<p>Whole Kashmiri red chillies \u2013 04 nos.<\/p>\n<p>Mutton with high fat content, cut into 1 \u00bd inch pieces \u2013 500 gm.<\/p>\n<p>Kashmiri red chili powder\u2013 1-1\/2 tbsp.<\/p>\n<p>Fennel seeds, powder &#8211; 02 tsp<\/p>\n<p>Dry ginger powder \u2013 \u00bd tsp.<\/p>\n<p>Coriander\u00a0powder \u2013 01 tbsp.<\/p>\n<p>Yogurt, hung- \u00be th cup<\/p>\n<p>Saffron (stepped in little hot milk) \u2013 02 gm.<\/p>\n<p>Mutton Stock- 1 \u00bd to 02 cups<\/p>\n<p>Garam masala powder- \u00bc th tsp.<\/p>\n<p>Khoya, grated- 50 gm.<\/p>\n<p>Almonds, blanched, peeled and ground into a fine paste-25 gm.<\/p>\n<p>Kewra water- 02 ml.<\/p>\n<p>Salt -to taste<\/p>\n<p>Ratanjot \u2013\u00a001 inch piece- 04 nos. heated with a little oil i.e. 25 ml mustard oil.<\/p>\n<p><strong>For Garnishing:<\/strong><\/p>\n<p>Coriander leaves- 02 sprigs<\/p>\n<p><strong>Method:<\/strong><\/p>\n<p><strong>For the Ratanjot oil preparation:<\/strong><\/p>\n<p>Heat mustard oil in a pan. Add Ratanjot sticks.<\/p>\n<p>Heat it for 03 minutes. It will give a rich red color to the oil. Strain and use as much required and store it for future use. Do not refrigerate.<\/p>\n<p><strong>For the Rogan Josh preparation:<\/strong><\/p>\n<p>Heat mustard oil in a lagan or a heavy bottomed pan, till smoking point.<\/p>\n<p>Switch off the gas let it cool, now heat the oil again and add asafoetida, cumin seeds, cinnamon, cloves, black peppercorns and black cardamoms and whole red chillies. Saut\u00e9 till fragrant. Add the mutton pieces and cook on high flame till it turns slightly reddish brown for 15 minutes<\/p>\n<p>Add 1\/2 cup of mutton stock and cook for about 10 min on low flame. Make sure to Stir constantly and scrape all the sediments from the bottom of the pan.<\/p>\n<p>Add\u00a0all ground spices \/ powdered masalas along with saffron milk and mix well. Add salt.<\/p>\n<p>Whisk and add whisked\u00a0hung yogurt\u00a0and cook for about 02 minutes.<\/p>\n<p>Add a cup of mutton stock and when the mutton is nearly done add the garam masala powder, grated khoya, almond paste and kewra water.<\/p>\n<p>Cook the mutton on a slow flame till done for about 1 \u00bd to 02 hours and till most of the gravy is absorbed<\/p>\n<p>Pour the\u00a0ratanjot-infused oil.<\/p>\n<p><strong>For serving:<\/strong><\/p>\n<p>Serve hot garnished with fresh coriander leaves, finely chopped. Goes best with steamed rice or Naan.<\/p>\n<p><strong>Chef Tips: <\/strong><\/p>\n<ol>\n<li>Mustard oil is heated in the pan with no other ingredients until it reaches a temperature where the first wisps of smoke appear. It is then taken off the flame and allowed to cool a little before adding ingredients to be cooked.
