You may serve it either cold or warm as a side dish or as a main course with bread.<\/strong><\/p>\n<p><strong>Preparation Time:\u00a025 minutes<\/strong><\/p>\n<p><strong>Baking Time- 15 minutes.<\/strong><\/p>\n<p><strong>Cooking Time:\u00a025 minutes<\/strong><\/p>\n<p><strong>Servings: 04.<\/strong><\/p>\n<p><strong>Ingredients and Quantity:<\/strong><\/p>\n<p>Aubergine, large, thickly sliced- 01 no.<\/p>\n<p>Courgette, thickly sliced- 01 no.<\/p>\n<p>Zucchini, green, thickly sliced-01 no<\/p>\n<p>Red bell pepper, deseeded and sliced- 01 no<\/p>\n<p>Yellow bell pepper, deseeded and sliced &#8211; 01 no.<\/p>\n<p>Green bell pepper, deseeded and sliced -01 no.<\/p>\n<p>Extra Virgin Olive Oil- 03 tbsp. + 01 tbsp.<\/p>\n<p>Red onion, cut into wedges, large- 01 no.<\/p>\n<p>Red chilli flakes- 01 tsp.<\/p>\n<p>Garlic cloves, sliced \/ minced- 04 nos.<\/p>\n<p>Tomatoes-, thickly sliced- 250 gm.<\/p>\n<p>Tomato puree- 01 tbsp.<\/p>\n<p>Vegetable stock- 250 ml \/ as required<\/p>\n<p>Wine vinegar \/ herb vinegar- \u00be th tbsp.<\/p>\n<p>Castor sugar- \u00bd tbsp.<\/p>\n<p>Capers- \u00be th tbsp.<\/p>\n<p>Celery stem, chopped- 01 no.<\/p>\n<p>Raisins- \u00be th tbsp.<\/p>\n<p>Pine nuts- \u00bd tbsp.<\/p>\n<p>Almonds, lightly toasted and slivered- \u00bd tbsp.<\/p>\n<p>Black olives, chopped- 01 tbsp. (Optional)<\/p>\n<p>Salt- to taste<\/p>\n<p>Freshly ground black pepper- to taste<\/p>\n<p><strong>Method:<\/strong><\/p>\n<p>Preheat the Oven to 450 \u02daF<\/p>\n<p>In a glass bowl toss the Aubergine, Courgette and peppers with the extra virgin olive oil.<\/p>\n<p>Add little salt and freshly ground pepper<\/p>\n<p>Spread the vegetables on to a baking tin \/ sheet\/ tray and bake for 15 minutes or until it has attained a brown colour. Turn over the vegetables, for even browning. Remove and Keep aside.<\/p>\n<p>In a heavy bottomed pan heat olive oil add onions, chilli flakes and garlic. Saut\u00e9 for 5 minutes.<\/p>\n<p>Add the tomatoes slices, tomato puree and let it simmer gently so that the sauce thickens. Pour in about 250ml vegetable stock.<\/p>\n<p>Add vinegar and sugar.<\/p>\n<p>Now add the roasted vegetables, capers, celery stem, raisins, pine nuts, almonds and black olives (Optional)<\/p>\n<p>Simmer for 15 minutes.<\/p>\n<p>Adjust seasonings, if required.<\/p>\n<p>Serve piping hot.<\/p>\n<p>Goes best with Ciabatta.<\/p>\n<p><strong>Chef Tips:<\/strong><\/p>\n<p>1.<strong>\u00a0<\/strong>Keep the aubergine and courgette in water, in order to prevent it from turning brown i.e. enzymatic browning.<\/p>\n<p>2. Do not over roast the vegetables, as they may burn and impart burnt flavor to the stew.<\/p>\n<p>3.You may add green olives, if desired.<\/p>\n<p>4.
