Succulent chicken chunks wrapped with cheese, fresh cream, broiled dried fenugreek leaves, and freshly grounded spices, grilled or barbecued sprinkled with lemon juice, accompanied with Onion laccha salad and mint -coriander -yogurt chutney.<\/strong><\/p>\n<p><strong>Preparation Time: <\/strong>00 Hrs 20 Mins<\/p>\n<p><strong>First Marination Time<\/strong>&#8211; 35 minutes.<br \/>\n<strong>Second Marination Time<\/strong>&#8211; Overnight in a refrigerator covered with cling wrap or minimum 03 Hours in a refrigerator covered with cling wrap.<br \/>\n<strong>Cooking time: <\/strong>00 Hrs 20 Mins<\/p>\n<p><strong>Serves: <\/strong>04<\/p>\n<p><strong>Category: <\/strong>Non-Veg<\/p>\n<p><strong>Cuisine Type: <\/strong>Indian<\/p>\n<p><strong>Ingredients &amp; Quantity<\/strong><\/p>\n<p>Chicken leg without skin, boneless- 500 gm. cut into 02 inch cubes<\/p>\n<p><strong>First Marination:<\/strong><\/p>\n<p>Ginger paste- 01 tbsp.<\/p>\n<p>Garlic paste- 01 tbsp.<\/p>\n<p>White pepper powder- 01 tsp.<\/p>\n<p>Green cardamom powder- \u00bc th tsp.<\/p>\n<p>Salt-02 gm.<\/p>\n<p>Raw papaya paste- \u00bc th cup (It is a tenderizer)<\/p>\n<p><strong>Second Marination:<\/strong><\/p>\n<p>Green chillies- 04 nos.<\/p>\n<p>Fresh coriander leaves- 03 tsp.<\/p>\n<p>Cheddar cheese, grated- 05 tbsp.<\/p>\n<p>Corn flour- 02 tsp.<\/p>\n<p>Fresh cream- \u00bd cup<\/p>\n<p>Hung curd- \u00bd cup<\/p>\n<p>Dried fenugreek leaves (Kasoori Methi), broiled- 1 \u00bd tsp.<\/p>\n<p>Nutmeg powder- \u00bd tsp.<\/p>\n<p>Mace powder- \u00bd tsp.<\/p>\n<p>Salt- To taste.<\/p>\n<p><strong>For basting the chicken pieces:<\/strong> Pure ghee\/ Melted butter \/ Canola oil- 1 \u00bd tbsp.<\/p>\n<p><strong>For Sprinkling: Lemon Juice-<\/strong> 01 no. &amp; Chaat masala \u2013 1\/4th tsp. (Optional)<\/p>\n<p><strong>Method:<\/strong><\/p>\n<ol>\n<li>First Marination Time- 35 minutes.<br \/>\nSecond Marination Time- Overnight in a refrigerator covered with cling wrap or minimum 03 Hours in a refrigerator covered with cling wrap.<br \/>\nOven Temperature: 425\u02daF.<\/li>\n<li>For the first marination:<br \/>\nClean and wash chicken pieces thoroughly.<br \/>\nWith a kitchen napkin \/ paper kitchen towel, pat dry the pieces to remove excess of moisture in it.<\/li>\n<li>In a glass bowl, combine the chicken pieces with ginger &amp; garlic paste, green cardamom powder, salt, pepper and raw papaya paste. Mix well. Cover with a cling wrap and refrigerate for 35 minutes.<\/li>\n<li>For the second marination:<br \/>\nRemove the marinated chicken pieces from the refrigerator and keep aside.<br \/>\nCoarsely grind green chillies and fresh coriander leaves without water using a mortar and pestle.<\/li>\n<li>To this ground mixture add grated cheddar cheese, corn flour, fresh cream, broiled kasoori methi , hung curd, nutmeg powder, mace powder and salt- To taste.
