This Andhra-style Pulihora is also known as Chintapandu Pulihora and is extremely easy to prepare and has an amazing balance of sour, sweet, savoury and spice. It <\/strong><strong>is known for a longer shelf life and is a great travel buddy. You may use leftover rice too to prepare this li-smacking rice.<\/strong><\/p>\n\n\n\n<p><strong>Each State of South India has a different version of this rice preparation and is commonly known as Tamarind Rice. One such popular variation from Karnataka is the \u201c Puliyogare\u201d<\/strong><strong><\/strong><\/p>\n\n\n\n<p><strong>Preparation Time: 15 Minutes<\/strong><\/p>\n\n\n\n<p><strong>Cooking Time: 30 Minutes<\/strong><\/p>\n\n\n\n<p><strong>Serves:4<\/strong><\/p>\n\n\n\n<p><strong>Ingredients and Quantity:<\/strong><\/p>\n\n\n\n<p>Rice, medium-grain- 1 \u00bd cups<\/p>\n\n\n\n<p>Black Tamarind Paste- \u00bd cup<\/p>\n\n\n\n<p>Thick jaggery syrup-1 tbsp.<\/p>\n\n\n\n<p><strong>For the spice paste:<\/strong><\/p>\n\n\n\n<p>Sesame oil-1 tbsp.<\/p>\n\n\n\n<p>Urad dal-1 tbsp.<\/p>\n\n\n\n<p>Chana dal-1 tbsp.<\/p>\n\n\n\n<p>Cumin seeds-1 tsp.<\/p>\n\n\n\n<p>Fenugreek seeds- 1 tsp.<\/p>\n\n\n\n<p>White Sesame Seeds- 1 tsp.<\/p>\n\n\n\n<p>Black peppercorn-1 tsp.<\/p>\n\n\n\n<p>Byadagi chillies, stem discarded- 2<\/p>\n\n\n\n<p>Asafoetida powder-a pinch<\/p>\n\n\n\n<p>Ginger, grated-1 tsp.<\/p>\n\n\n\n<p>Turmeric- \u00bc th tsp.<\/p>\n\n\n\n<p>Water -1 cup \/ or more, if required<\/p>\n\n\n\n<p><strong>For the Tempering:<\/strong><\/p>\n\n\n\n<p>Sesame oil-1 tbsp.<\/p>\n\n\n\n<p>Mustard seeds-1 tsp.<\/p>\n\n\n\n<p>Peanuts, raw-4 tbsp.<\/p>\n\n\n\n<p>Urad dal-1 tsp.<\/p>\n\n\n\n<p>Chana dal-1 tsp.<\/p>\n\n\n\n<p>Byadagi Chillies- 4<\/p>\n\n\n\n<p>Curry leaves-1 sprig<\/p>\n\n\n\n<p><strong>Method:<\/strong><\/p>\n\n\n\n<p>Wash the rice until the water runs clear. Drain the rice completely.<\/p>\n\n\n\n<p>Soak it in water for at least 30 minutes.<\/p>\n\n\n\n<p>Prepare the rice by draining method, ratio of rice to water is 1:8.<\/p>\n\n\n\n<p>Once the rice is cooked , drain the rice completely and spread the rice grains on a clean and dry kitchen surface, so that the grains do not stick to each other.<\/p>\n\n\n\n<p>For preparing the spice mix, heat oil in a non-stick pan, add the urad and chana dal and cook it on a slow flame ,stirring continuously. Set aside.<\/p>\n\n\n\n<p>Add in the same pan, the mustard seeds, cumin seeds , fenugreek seeds ,Sesame seeds, black peppercorn ,dry red chillies , grated ginger , turmeric and asafoetida. Stir and cook for a few seconds.<\/p>\n\n\n\n<p>Switch off the flame.<\/p>\n\n\n\n<p>Transfer in a clean bowl and cool it completely.<\/p>\n\n\n\n<p>Now transfer the dals and &nbsp;roasted spices in the blender, prepare a smooth paste by adding 1 cup of water. Set aside.<\/p>\n\n\n\n<p>Cook the tamarind and jaggery together till it thickens ,now add the spice paste and salt to taste.<\/p>\n\n\n\n<p>Mix well. Cook on a slow flame until it thickens.
