This Lip-smacking Khichdi is prepared with Bajra (Pearl Millet), Yellow Moong Dal , is tempered with Desi Ghee, Asafoetida, Cumin Seeds, Grated Ginger ,Green Chillies and Turmeric and served piping hot, topped with a generous dose of Desi Ghee.<\/strong><\/p>\n\n\n\n<p><strong>Soaking Time of Bajra: 8 hours \/ Overnight<\/strong><\/p>\n\n\n\n<p><strong>Preparation Time: 5 minutes<\/strong><\/p>\n\n\n\n<p><strong>Cooking Time: 15 minutes<\/strong><\/p>\n\n\n\n<p><strong>Serves-4<\/strong><\/p>\n\n\n\n<p><strong>Ingredients and Quantity:<\/strong><\/p>\n\n\n\n<p>Bajra (Pearl Millet) washed thoroughly, soaked overnight in water and drained-1\/2 cup<\/p>\n\n\n\n<p>Split Green Gram, skinless ( Yellow Moong Dal), washed &amp; drained- 1\/2 cup<\/p>\n\n\n\n<p>Desi Ghee-1 tbsp.<\/p>\n\n\n\n<p>Asafoetida-1\/4th tsp.<\/p>\n\n\n\n<p>Cumin seeds-1 tsp.<\/p>\n\n\n\n<p>Turmeric Powder-1\/2 tsp.<\/p>\n\n\n\n<p>Ginger, grated- 2 tsp.<\/p>\n\n\n\n<p>Green Chillies, finely Chopped-2<\/p>\n\n\n\n<p>Salt- to taste<\/p>\n\n\n\n<p>Water- 4 cups<\/p>\n\n\n\n<p><strong>For the topping:<\/strong><\/p>\n\n\n\n<p>Desi ghee-1 tbsp.<\/p>\n\n\n\n<p><strong>Method:<\/strong><\/p>\n\n\n\n<p>With the help of a mixer grinder, coarsely grind the completely drained bajra&#8230; pulse gently for 4 to 5 times.<\/p>\n\n\n\n<p>Wash the ground bajra and discard the husk.<\/p>\n\n\n\n<p>In a pressure cooker, heat desi ghee, add asafoetida.<\/p>\n\n\n\n<p>Add cumin seeds, let them crackle.<\/p>\n\n\n\n<p>Now add the grated ginger, saut\u00e9 and mix.<\/p>\n\n\n\n<p>Add the green chillies saut\u00e9 for few seconds.<\/p>\n\n\n\n<p>Now add turmeric powder.<\/p>\n\n\n\n<p>Now add the coarsely ground bajra and yellow moong dal.<\/p>\n\n\n\n<p>Saut\u00e9 and stir well.<\/p>\n\n\n\n<p>Add water.<\/p>\n\n\n\n<p>Close the pressure cooker with its lid.<\/p>\n\n\n\n<p>Cook on a medium flame &#8230; 1 whistle.<\/p>\n\n\n\n<p>After 1 whistle cook the khichdi for another 2 to 3 minutes on a low flame.<\/p>\n\n\n\n<p>Switch off the flame.<\/p>\n\n\n\n<p>Let the pressure in the cooker release naturally.<\/p>\n\n\n\n<p>Open the lid and mix the khichdi well.<\/p>\n\n\n\n<p>Serve piping hot ,topped with a generous dose of desi ghee.<\/p>\n\n\n\n<p><strong>Chef Tips:<\/strong><\/p>\n\n\n\n<p>1. You may pulse the bajra gently for 3 to 4 times , i.e. coarsely grinding it , without soaking, wash and discard the husk and then soak it.<\/p>\n\n\n\n<p>2. You may add washed, soaked for 1 hour and then drained rice too ,along with bajra &amp; moong dal.<\/p>\n\n\n\n<p>3.
