The Head Cook Beli Ramji in Maharaja Ranjit Singh\u2019s palace had curated and crafted this mind-boggling and licious dish. The Maharaja completely loved relishing it, therefore he named this mutton dish as Mutton Beliram (Meat Beliram). autoplay; clipboard-write; encrypted-media; gyroscope; picture-in-picture; web-share\" referrerpolicy=\"strict-origin-when-cross-origin\" allowfullscreen><\/iframe>\n<\/div><figcaption><strong>Mutton Beliram :By Chef Ranveer Brar<\/strong><\/figcaption><\/figure>\n\n\n\n<p><strong>Preparation Time: <\/strong>20 minutes<\/p>\n\n\n\n<p><strong>Marination Time: <\/strong>2 hours \/ Overnight in the refrigerator.<\/p>\n\n\n\n<p><strong>Cooking Time:<\/strong> takes 45 to 50 minutes ,slow-cooked if marinated overnight.<\/p>\n\n\n\n<p><strong>Serves<\/strong>-4<\/p>\n\n\n\n<p><strong>Ingredients and Quantity:<\/strong><\/p>\n\n\n\n<p>Mutton, curry cut- 1 kg.<\/p>\n\n\n\n<p><strong>For the Marination:<\/strong><\/p>\n\n\n\n<p>Curd, whisked- 2 cups<\/p>\n\n\n\n<p>Onion large, thinly sliced- 2 nos.<\/p>\n\n\n\n<p>Ginger, Garlic and Green Chilli Paste \u2013 2 tbsp.<\/p>\n\n\n\n<p>Green Chillies, slit \u2013 2 nos.<\/p>\n\n\n\n<p>Bay leaves- 2 nos.<\/p>\n\n\n\n<p>Black Peppercorns- 10 nos.<\/p>\n\n\n\n<p>Black Cardamom -1 no.<\/p>\n\n\n\n<p>Cloves \u2013 3 to 4 nos.<\/p>\n\n\n\n<p>Cinnamon stick \u2013 1 inch.<\/p>\n\n\n\n<p>Red chilli powder, degi- 2 tsp.<\/p>\n\n\n\n<p>Coriander Powder \u2013 4 tsp.<\/p>\n\n\n\n<p>Turmeric Powder \u2013 1\/4<sup>th<\/sup> tsp<\/p>\n\n\n\n<p>Salt- to taste<\/p>\n\n\n\n<p><strong>For the Gravy<\/strong><\/p>\n\n\n\n<p>Desi Ghee \u2013 3 tbsp.<\/p>\n\n\n\n<p>Cumin Seeds- 1 tsp.<\/p>\n\n\n\n<p>Onions large, sliced thinly- 2 nos.<\/p>\n\n\n\n<p>Ginger paste \/ juliennes \u2013 1 tbsp.<\/p>\n\n\n\n<p>Green Chilli , slit- 2 nos.<\/p>\n\n\n\n<p>Coriander seeds, coarsely ground \/ crushed- 2 tbsp.<\/p>\n\n\n\n<p>Salt- to taste<\/p>\n\n\n\n<p>Mutton stock\/ water- as required<\/p>\n\n\n\n<p>Fresh &nbsp;Coriander Leaves, finely chopped- 2 tbsp.<\/p>\n\n\n\n<p><strong>For the Garnish<\/strong><\/p>\n\n\n\n<p>Ginger , cut into juliennes \u2013 1 tbsp.<\/p>\n\n\n\n<p>Green chillies, slit- 2 nos.<\/p>\n\n\n\n<p>Fresh Coriander Leaves , finely chopped- 1 tbsp.<\/p>\n\n\n\n<p><strong>Method:<\/strong><strong><\/strong><\/p>\n\n\n\n<p><strong>For the Marination:<\/strong><\/p>\n\n\n\n<p>In a glass bowl add washed, drained and pat dried mutton, whisked curd, sliced onion, paste of ginger, garlic and green chilli, slit green chillies, bay leaves, black peppercorns, black cardamom, cloves , cinnamon stick, red chilli powder, coriander powder, turmeric powder, salt and mix well.<\/p>\n\n\n\n<p>Keep aside for at least 2 hours or overnight cling wrapped in the refrigerator.<strong><\/strong><\/p>\n\n\n\n<p><strong>For the gravy:<\/strong><\/p>\n\n\n\n<p>Remove the marinated mutton from the refrigerator, and bring it down to the room temperature.<\/p>\n\n\n\n<p>In a heavy-bottomed Kadhai \/Pan heat desi ghee add cumin seeds, ginger, slit green chillies and sliced onion. Saut\u00e9 till golden brown in colour.<\/p>\n\n\n\n<p>Now add the marinated mutton , sear \/saut\u00e9 it until the oil oozes out and the marination \/ gravy coats the mutton pieces.<\/p>\n\n\n\n<p>Add the coarsely ground \/ crushed coriander seeds, add salt.<\/p>\n\n\n\n<p>Mix well. Saut\u00e9 for a few minutes.<\/p>\n\n\n\n<p>Add the mutton stock.<\/p>\n\n\n\n<p>Cover the pan with a tight fitting lid ,simmer and cook for 45 to 50 minutes ensuring that you stir it occasionally.<\/p>\n\n\n\n<p>Remove the lid and add the chopped coriander leaves and mix.<\/p>\n\n\n\n<p>Switch off the flame.<\/p>\n\n\n\n<p><strong>For the Serving:<\/strong><\/p>\n\n\n\n<p>Serve hot in a serving dish, garnished with juliennes of ginger, slit green chillies and chopped coriander leaves. Goes best with desi ghio de naal chopdya hoya Phulka \/ Parathas \/ Naan.<\/p>\n\n\n\n<p><strong>Chef Tips:<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\" type=\"1\"><li>You may add lightly roasted and crushed Kasoori Methi to the prepared mutton.<\/li><li>You may pressure cook the mutton when it reaches a stage where mutton stock is added, I personally suggest slow-cooking over pressure cooker cooking.<\/li><li>You may use mustard oil instead of desi ghee , if desired but do ensure that you heat the mustard oil till smoking point , cool it down completely and then heat and
