(Optional)<\/p>\n<p>Salt- to taste<\/p>\n<p><strong>For the Paste:<\/strong><\/p>\n<p>Oil \/ Coconut Oil- 1 tbsp<\/p>\n<p>Fenugreek seeds- 1\/4<sup>th<\/sup> tsp.<\/p>\n<p>Dried whole red chillies, stem and seeds discarded- 6 nos.<\/p>\n<p>Asafoetida powder- a pinch<\/p>\n<p>Cumin seeds- \u00bd tsp.<\/p>\n<p>Coriander seeds- 2 tsp.<\/p>\n<p>Split Bengal gram<\/p>\n<p>(Chana dal)- 1 tbsp.<\/p>\n<p>Poppy seeds- 1\/4<sup>th<\/sup> tbsp..<\/p>\n<p>Coconut, grated- 1\/4<sup>th<\/sup> cup<\/p>\n<p>Small sambar onions (Pear Onions, Madras Onion, Shallots)-100 gm.<\/p>\n<p><strong>For the tempering:<\/strong><\/p>\n<p>Oil \u2013 2 tbsp.<\/p>\n<p>Mustard seeds- \u00bd tsp.<\/p>\n<p>Cumin seeds- \u00bd tsp.<\/p>\n<p>Fenugreek seeds- 1\/4<sup>th<\/sup> tsp.<\/p>\n<p>Whole Red chillies -2 nos.<\/p>\n<p>Curry leaves-<strong><em>\u00a0 <\/em><\/strong>1 sprig<\/p>\n<p>Asafoetida- a pinch<\/p>\n<p>Small sambar onions \/ Shallots ,peeled and whole- 20 nos.<\/p>\n<p>Tomatoes, red, quartered- 2 small<\/p>\n<p>Home-made Sambar Masala Powder- 1\/4th tbsp.<\/p>\n<p>Tamarind pulp-2 tbsp.<\/p>\n<p><strong>For The Garnish:<\/strong><\/p>\n<p>Fresh Coriander leaves, finely chopped- 1 tbsp.<\/p>\n<p><strong>Method:<\/strong><\/p>\n<p>Pick, wash and soak Split red gram.<\/p>\n<p>Cook in 2 \u00bd cups of water with salt and turmeric added into it.<\/p>\n<p>When dal is \u00bd done add drumsticks to it.<\/p>\n<p>Once cooked keep the dal aside.<\/p>\n<p><strong>For paste:<\/strong> Heat oil add fenugreek seeds, whole red chillies, asafoetida, cumin seeds, Coriander seeds, Bengal gram dal (chana dal) and poppy seeds. Grind to a fine paste adding the coconut and shallots using very less water. Add the ground paste to the cooked dal.<\/p>\n<p><strong>For Tempering:<\/strong> Heat oil add mustard seeds, cumin seeds, fenugreek seeds, whole red chillies, curry leaves and asafoetida. Let them crackle \/ splutter add the shallots cook till golden brown, now add the tomatoes, cook for 2 minutes, add tamarind pulp cover and cook for 5 minutes till the raw aroma disappears. Add the sambar masala powder; let it cook for few seconds. Add \u00bd tbsp. \u00a0of water. Mix well.<\/p>\n<p>Pour the tempering over the dal, mix well.<\/p>\n<p>Add water and adjust consistency if the sambar is too thick.<\/p>\n<p>Bring to a boil.<\/p>\n<p><strong>To Serve:<\/strong><\/p>\n<p>Serve hot garnished with chopped coriander leaves.<\/p>\n<p>Goes best with Steamed Rice.<\/p>\n<p><strong>Chef Tips:<\/strong><\/p>\n<p><strong>Though this sambar is prepared with the addition of pearl onions only, you may however experiment by adding vegetables of your choice.
