Punjabi&#8217;s\u00a0and I am sure all love relishing Pindi chole which are prepared with chickpeas various spice powders especially the Dried Pomegranate seed and Dry Mango powder. Served very hot garnished with juliennes of ginger and slit green chillies.<\/b><\/p>\n<p><strong>It may be served with Ek Mukka Maar Ke Gandda \/Ek Mukka Maar Ke Pyaaz\u00a0\u00a0i.e. in Punjab, the locals prefer to hit an onion on its crown with a folded fist, peel and then relish it.<\/strong><\/p>\n<p><strong>Goes best with Hot Puffed Bhaturas \/ Poories.<\/strong><\/p>\n<p><img \/><\/p>\n<p><strong>Preparation Time:<\/strong> 20 minutes<\/p>\n<p><strong>Soaking Time of chickpeas:<\/strong> Overnight \/ 6 to 8 hours<\/p>\n<p><strong>Cooking Time:<\/strong> 45 minutes<\/p>\n<p><strong>Serves:<\/strong> 4<\/p>\n<p><strong>Ingredients and Quantity:<\/strong><\/p>\n<p>Kabuli Chana (Chickpeas) \u2013 1 cup<\/p>\n<p>Water- 3 cups<\/p>\n<p>Salt- to taste<\/p>\n<p><b>For the Bouquet\u00a0Garni:<\/b><\/p>\n<p>Muslin cloth- 1\/4<sup>th<\/sup> meter<\/p>\n<p>Black Tea leaves- 2 tbsp.<\/p>\n<p>Bay leaves- 2 nos.<\/p>\n<p>Black cardamom- 2 nos.<\/p>\n<p>Green cardamom- 2 nos.<\/p>\n<p>Cloves- 4 nos.<\/p>\n<p>Cinnamon- 1 inch piece<\/p>\n<p><strong>For the Tempering (Tadka) No-1:<\/strong><\/p>\n<p>Refined Oil- 3 tbsp.<\/p>\n<p>Onion paste- 1 large<\/p>\n<p>Ginger paste- \u00bd tbsp.<\/p>\n<p>Garlic Paste- \u00bd tbsp.<\/p>\n<p>Red Tomato ,blanched and peeled , puree- 2 large<\/p>\n<p><strong>For the sprinkling:<\/strong><\/p>\n<p>(Mix the below mentioned powdered spices in a bowl)<\/p>\n<p>Red chilli powder- 1 \u00bd tsp<\/p>\n<p>Turmeric powder- 1\/4<sup>th<\/sup> tsp<\/p>\n<p>Coriander powder- 1 \u00bd tsp.<\/p>\n<p>Punjabi Garam Masala powder- 1 \u00bd tsp.<\/p>\n<p>Dry Pomegranate seed powder- 1 \u00bd \u00a0tsp.<\/p>\n<p>Cumin powder- 1 tsp.<\/p>\n<p>Dry Mango powder- 1 tsp.<\/p>\n<p>Dry fenugreek leave powder- 1 tsp.<\/p>\n<p>Rock salt- \u00bd tsp<\/p>\n<p>Asafoetida- 1\/4<sup>th<\/sup> tsp.<\/p>\n<p><strong>For the Tempering (Tadka)No-2:<\/strong><\/p>\n<p>Refined Oil- 2 tbsp.<\/p>\n<p>Carom seeds (Ajwain)- \u00bd tsp.<\/p>\n<p>Garlic cloves, crushed- 4 nos.<\/p>\n<p>Red chilli powder- \u00bd tsp.<\/p>\n<p><strong>For the garnish:<\/strong><\/p>\n<p>Ginger, cut in to juliennes- \u00bd tbsp..<\/p>\n<p>Green chillies , slit- 2 nos.<\/p>\n<p>Onion rings- a few (Optional)<\/p>\n<p><strong>Method:<\/strong><\/p>\n<p>Cook the soaked chole with water , bouquet garni and salt in a pressure cooker till 3 whistles.<\/p>\n<p>After 3 whistles simmer them for another 10 minutes.<\/p>\n<p>Discard the bouquet garni.<\/p>\n<p>In a heavy bottomed Kadhai add the onion paste saute till the raw aroma disappears , add the ginger garlic paste.<\/p>\n<p>Cook till the raw aroma disappears and you can see oil oozing out from the masala.<\/p>\n<p>Now add the tomato puree.<\/p>\n<p>Cover and cook , stirring it occasionally till the oil oozes out.<\/p>\n<p>Add this to the simmering chole and mix well.
