8<\/p>\n<p>Potatoes, cut in half- 4<\/p>\n<p><strong><u>For the Masala:<\/u><\/strong><\/p>\n<p>Desi ghee \/ Refined oil- 4 tbsp.<\/p>\n<p>Onions, thinly sliced- 1 large<\/p>\n<p>Ginger paste- \u00bd tbsp.<\/p>\n<p>Garlic paste- 1 tbsp.<\/p>\n<p>Curd, thick and whisked- 1 cup<\/p>\n<p>Coriander powder- \u00bd tbsp.<\/p>\n<p>Red chilli powder- 1 tsp.<\/p>\n<p>Black pepper powder- \u00bd tsp.<\/p>\n<p>Nutmeg powder- 1\/4<sup>th<\/sup> tsp.<\/p>\n<p>Green chillies, slit- 2<\/p>\n<p>Milk- \u00bd cup<\/p>\n<p>Water \u2013 \u00bd cup<\/p>\n<p>Salt to taste<\/p>\n<p>Saffron steeped in 1 tbsp. of lukewarm milk- 1\/4<sup>th<\/sup> gm.<\/p>\n<p><strong><u>Whole Garam Masala<\/u><\/strong><\/p>\n<p>Bay leaf-1<\/p>\n<p>Black Cardamom- 2<\/p>\n<p>Green cardamom-2<\/p>\n<p>Cinnamon stick- 1 inch<\/p>\n<p>Cloves- 2<\/p>\n<p>Black pepper corns-6<\/p>\n<p><strong><u>For the layering:<\/u><\/strong><\/p>\n<p>Saffron steeped in 1 tbsp. of lukewarm milk- 1\/4<sup>th<\/sup> gm.<\/p>\n<p>Rose water \u2013 1 tsp.<\/p>\n<p>Garam masala powder- \u00bd tsp<\/p>\n<p>Chopped Coriander leaves- \u00bd cup<\/p>\n<p>Sliced golden brown onion- \u00bd cup<\/p>\n<p>Desi ghee, hot- \u00bd tbsp.<\/p>\n<p><strong><u>For the garnish:<\/u><\/strong><\/p>\n<p>Fried mixed nuts and raisins- \u00bd tbsp.<\/p>\n<p>Sliced golden brown onion- \u00bd tbsp..<\/p>\n<p><strong>Method:<\/strong><\/p>\n<p>In a non-stick pan add 2 tsp of oil add the potatoes, brown them and set aside.<\/p>\n<p>In the same pan brown the eggs and set aside.<\/p>\n<p>Steep saffron in lukewarm milk to extract the colour and flavour.<\/p>\n<p>Heat oil in a heavy-bottomed pan, add all the whole spices on a low flame. Add in the onion and saut\u00e9 till turns golden brown. Add in the ginger and garlic paste, continue to saut\u00e9 for 2-3 minutes. Add the slit green chillies. Now add all the spice powders and mix well. Add in the whisked curd and fry till the moisture in the curd evaporates and the oil oozes out.<\/p>\n<p>Add in the browned eggs and potatoes. Saut\u00e9 in the masala, ensuring that they do not break. Add in the milk and water. Add salt and mix. Simmer for 2 minutes.<\/p>\n<p>The gravy should not be too watery or too dry before you layer it with the rice.<\/p>\n<p>Spread half the rice over the prepared Egg and potato masala. Sprinkle less than half of the fried onions, chopped coriander leaves, sprinkle garam masala powder and Steeped saffron. Sprinkle rose water.<\/p>\n<p>Repeat the process. In the top add hot ghee.<\/p>\n<p>Cover it with an aluminium foil and then with a lid.
